An outstanding side dish for any holiday meal, whipped feta is topped with blood oranges and roasted cauliflower florets.

Ingredients

  1. 3 tablespoons champagne vinegar
  2. 1 tablespoon pomegranate juice
  3. ½ shallot, minced
  4. ½ teaspoon fresh cracked pepper
  5. 1 pinch white sugar
  6. 1 tablespoon pomegranate seeds

Instructions

  1. Whisk vinegar, pomegranate juice, shallot, pepper, and white sugar together in a bowl until sugar dissolves. Add pomegranate seeds, cover the bowl with plastic wrap, and refrigerate until chilled, about 1 hour.

If making this recipe more than a day in advance wait until just before serving to add the pomegranate seeds. The vinegar will dissolve the seeds.
