Holiday Buffet Meatballs

This recipe was developed after I had my first black bean vegetarian burger and thought I needed to learn how to cook one. However, I changed my mind and went with a vegetarian black bean meatloaf instead. This recipe, which is based on a 4-ounce portion, might be used to create twelve 4-ounce burgers rather than a single meatloaf.

Ingredients

  1. 1 (38 ounce) package frozen cooked meatballs, thawed
  2. 1 cup ketchup
  3. ¾ cup packed brown sugar
  4. 3 tablespoons vinegar
  5. 1 tablespoon Worcestershire sauce
  6. ½ teaspoon dry mustard
  7. ¼ teaspoon ground cloves
  8. 1 teaspoon garlic salt
  9. 1 beef bouillon cube

Instructions

  1. Preheat oven to 325 degrees F (160 degrees C). Place meatballs in a casserole dish.
  2. Bake in preheated oven until warmed through, about 10 minutes.
  3. Combine ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, cloves, garlic salt, and beef bouillon cube in a saucepan; bring to a boil, stirring often. Reduce heat to low and simmer for 5 minutes. Pour sauce over meatballs; cover dish with aluminum foil.
  4. Continue baking in oven until meatballs are hot, about 20 minutes.
