Ingredients
- 1 loaf ciabatta bread
- 1 cup roasted red peppers
- 2 cloves garlic
- 1/4 cup chopped walnuts
- 1/2 cup extra-virgin olive oil
- Salt and pepper
- 2 tablespoons pomegranate molasses
Instructions
- Slice ciabatta bread into serving sizes and toast on both sides, in the oven or grill. Set aside.
- Pound the peppers, garlic, and walnuts in a mortar. Slowly add olive oil to make an amalgamated paste. Next, add pomegranate molasses. Finally, season with salt and pepper, to taste.
- Put generous spoonfuls of the paste on the toast.

Extremely easy to make and very colorful. I reduced the olive oil to just 2 Tbsp of olive oil as the walnuts are also oily. I used a food processor and just processed until everything was in small chunks. I roasted both the bell pepper and the garlic cloves ( to mellow the flavor of the garlic) and garnished the dip with chopped pistachios. Flavor Burst!!!!
Interesting side note: A very flavorful bread topping such as this will actually reduce your bread consumption. The little spoonfuls of healthy topping will slow down the consumption of bread. I found I only ate a fraction as much bread.
Don’t let the pomegranate molasses put you off. Where I live you can buy it in a number of places. My wife got a 10 ounce bottle for $2.49 at a small Arabic grocery stand. As pungent as it is, I will get lots of dishes from my bottle.
