Heirloom Tomato Chow-Chow

Ingredients

  1. 4 cups apple cider vinegar
  2. 1 cup sugar
  3. 1 1-inch piece ginger, grated
  4. 1 tablespoon dry mustard
  5. 1 tablespoon turmeric
  6. 3 tablespoons mustard seeds
  7. 3 tablespoons celery seeds
  8. 1 1/2 tablespoons pickling spice
  9. Kosher salt
  10. 2 pounds firm heirloom tomatoes (mixed colors and varieties), cut into large chunks
  11. 2 medium onions, sliced

Instructions

  1. Combine the vinegar, sugar, ginger, dry mustard, turmeric, mustard seeds, celery seeds, pickling spice and 1 teaspoon salt in a large pot. Bring to a boil over high heat, then reduce the heat and simmer 15 minutes to extract the flavors of the spices.
  2. Return to high heat; once the mixture is boiling and steaming, add the tomatoes and onions, stirring to coat everything evenly. Reduce the heat and simmer 5 minutes. Remove from the heat and cool to room temperature.

this sounds like a recipe from my granny we’re southern and she only cooked things that were slap your mama good. I am wondering if you could can this? We have a large amount of tomatoes from our garden and I’d love to can some of this chow chow for winter, gran also made green tomato chow chow I wish I had the recipe for that! Thanks Tyler!!
