My husband and I both adore this chicken soup, and I appreciate how healthy it is.

Ingredients

  1. 10 cups chicken broth
  2. 1 onion, chopped
  3. 1 cup sliced celery
  4. 1 cup sliced carrots
  5. ¼ cup snipped parsley
  6. ½ teaspoon cracked black pepper
  7. ½ teaspoon dried thyme leaves
  8. 1 bay leaf
  9. ¾ pound chicken, cut into cubes
  10. 2 cups cooked rice
  11. 2 tablespoons lime juice
  12. lime for garnish

Instructions

  1. Combine chicken broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in a Dutch oven; bring to a boil. Reduce heat to low; simmer until the onion and celery begin to soften, 10 to 15 minutes. Stir chicken into the simmering broth; cook until the chicken is no longer pink in the middle, 5 to 10 minutes. Remove and discard bay leaf. Stir rice and lime juice into the broth; cook and stir just until rice is hot and grains separate, about 1 minute. Garnish with lime slices.

So simple but very tasty. I used 9 C chicken broth and put a hearty 3/4 C of uncooked rice in the pot about 20 minutes before it was finished. Used cilantro instead of parsley.

I didn’t have parsley. I thought I had some dried parsley ,but nope. So I substituted dried cilantro. I personally like cilantro better than parsley anyway. I also put the rice in raw when I started cooking the broth. I figured it would cook by the time everything else was done. It is so easy, this recipe. Thanks. I think it was too much rice. I think I would use half the amount next time. I want to keep this recipe though . It is a tasty soup . The rice was completely cooked the way I made it.

I loved the consistency of this soup and it had good flavor but a bit bland. I will try adding oregano and bell pepper next time. I made some changes, one of which was to use homemade stock from the carcass of a rotisserie chicken. I did not add any boullion so that might add more flavor. I used cooked chicken, (from the Rotisserie) and 1 cup raw rice. Both worked well. I cooked for the same amount of time although I sauteed the vegetables first to soften them.

I made a double batch for my Scout Troop to have by a fire while we checked out a quinzee I built. The only thing I changed was I did not add the lime. The double batch WENT like lightning with 7 kids 2 adults. Definitely making again!

Good flavor and quick and easy to make. I put in 2 cups rice right in the soup and cooked it that way. Huge mistake we had a big pot of rice. Next time won’t make that mistake. I’ll try just 1 cup rice and still cook it in the soup.

So simple, so yummy, so healthy! I used salt free chicken stock and beefed up the spices, also added half a cup of white wine and a tablespoon of minced garlic. It tasted just like the homemade chicken rice soup my Italian grandmother used to make. Sooooo good!

Tried this recipe with leftover roast chicken (white meat) and the family loved it. The herbs, seasoning, and lime juice really made this recipe stand out. I was winding down a head cold and it seemed soothing.
