Healthy Waldorf Chicken Salad

One of the most adaptable sandwich ingredients is chicken salad. With carrots and celery, you may be daring; with grapes and oranges, you can be sweet; or with curry, you can be even more complex. The one factor is typically mayonnaise, which, despite being creamy and tasty, is high in calories and fat. Greek yogurt makes my Waldorf chicken salad lighter. This recipe pairs perfectly with Park Hill maple pepper from the Savory Spice Shop®.

Ingredients

  1. 3 ounces plain Greek yogurt
  2. 1 teaspoon apple cider vinegar
  3. ⅛ teaspoon poppy seeds
  4. 2 teaspoons maple pepper seasoning (such as Savory Spice Shop® Park Hill)
  5. salt to taste
  6. 6 ounces chopped, cooked chicken
  7. ½ cup chopped Honeycrisp apple
  8. ¼ cup chopped toasted walnuts
  9. 1 tablespoon milk, or as needed (Optional)

Instructions

  1. Stir together yogurt, vinegar, poppy seeds, maple pepper seasoning, and salt in a bowl. Add chicken, apple, and walnuts; mix to combine. If mixture seems too thick, add milk until desired consistency is reached
