Hawaiian Stew

I once purchased a comparable spread at the grocery store, but I believed that I could make it myself more effectively and affordably. If you’d rather, you can substitute imitation crab for genuine crab. You may either buy fresh artichokes and prepare the hearts yourself or use the prepared and frozen artichoke hearts that I use.

Yield: 8 servings

Ingredients

  1. 2 pounds ground beef
  2. 2 pounds fresh green beans, cut into 1 inch pieces
  3. 2 large Spanish onions, sliced
  4. 2 green bell peppers, chopped
  5. 2 large tomatoes, sliced
  6. 2 medium heads cabbage, quartered
  7. soy sauce
  8. 1 cup white rice

Instructions

  1. In a large stock pot, layer ground beef, green beans, onions, bell peppers, and tomatoes. Finish with a layer of cabbage, then evenly drizzle soy sauce over top. Cover and cook over medium for 1 hour, or until cabbage is tender and meat is well done. Reduce heat as needed to prevent burning.
  2. Meanwhile, rinse rice in a fine mesh strainer under cold running water until no longer cloudy. Transfer to a medium saucepan and cover with 2 cups water. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, remove from heat and let stand for 10 minutes, or until all liquid has evaporated. Serve over rice.

I made the recipe as written, except I used browned stew meat instead of the ground beef. I think it is an excellent stew, but have no idea what makes it Hawaiian. I also did not serve it over rice, or pasta, but as a stew, making it much lower in carbs. As a note, be aware that it makes a lot. Next time I’ll halve it.

I’ve been making this for my family for about a year and it is always a hit! Perfect for chilly Spring weather and full of goodness. The only changes I make are to add some minced garlic on top of the hamberger and (in this batch) I used red and yellow bell peppers because they are what I had on hand. The result is a beautiful, nourishing meal even my picky eaters are happy to see served.

I couldn’t believe you just toss thing on a pot and turn heat on and it turns into a delicious dish, but that’s what happened! I couldn’t fit two heads of cabbage into my stock pot, though I suppose I could have waited till verges reduce and add the second head. Not the fanciest but tasty and easy,

I made this recipe vegetarian and it turned out pretty darn good and was so easy to make. I put a little olive oil on the bottom of the pot, then put the veggies on first. Then the soy sauce. I used one bag of frozen morningstar farm crumbles and put them on top and cooked for an hour. I will make this again, very low in fat and carbs with the veggie crumbles.

I followed the recipe only I simmered it on the stove to cook faster. It was pretty good & tastey for such simple ingredients.

Excellent, easy, and great for a crowd. I didn’t have cabbage when i made it, i used peas, it was still awesome. Mermaid
