Haupia Macadamia Nut Bread Pudding

Ingredients

  1. 15 croissant, preferably 1 day old
  2. 5 eggs
  3. 1 1/2 cups evaporated milk
  4. 1 1/2 cups coconut milk
  5. 1 cup sugar, granulated
  6. 1 quart water
  7. 1/2 cup coconut, shredded
  8. 1/2 cup chopped macadamia nuts

Instructions

  1. Preheat oven to 300 degrees F.
  2. Cut croissant into 1-inch cubes and spread along the bottom of a 9 by 13-inch baking pan. Mix eggs, evaporated milk, coconut milk, and sugar; add water until it has a custard texture. Pour custard mixture over bread cubes.
  3. Top with shredded coconut and macadamia nuts. Bake for 1 1/2 to 2 hours.

The water is for the water bath!! The instructions Need to be more clear about that, clearly considering all the reviews saying they messed up there. I’d recommend doubling the mixture as my bread didn’t get fully soaked (my crossiants went bad so I used Hawaiian bread instead.), and also adding extra egg yolks to make it taste extra custardy as I do with all bread pudding recipes. I wouldn’t say it necessarily tastes like haupia but it still tastes good despite that! Just tastes like bread pudding made with coconut milk.

Unclear, maybe even inaccurate recipe and not great flavor. Read the reviews, below: there is obviously a big debate going on about whether or not the 1 quart of water is for a water bath or for the recipe itself. First off, if you are actually using 15 croissants, you would need the water or it would be too dry (but then there would not be enough eggs or sugar to get a custard); and second, there is no way 15 croissants fit into one 9 x 13 dish. I made this and only 4 croissants were needed to make 8 cups of cubes–and then I used the water in a water bath. I got bread pudding. The flavor was not great–I thought it was not sweet enough for a bread pudding. Don’t waste your time, and expensive croissants and mac nuts…this is a dud.

A spectacular dessert! I could not get coconut milk, so I used coconut cream and NO sugar. I used milk instead of water. All 10 people raved about it and took another piece!!

The Bread Pudding was absolutely delicious! DEFINATELY – the recipe should read “1 qt water to water bath bread pudding”. Do not add the water to the pudding. The only thing I would do different is to mix the macadamia nuts with the croissant cubes AND on top. I took this to a pot-luck and everyone raved about it. A must serve hot or at least warm so bring out all the flavors.

I made this for a Hawaiian themed dinner. The recipe was great, as long as you read the reviews first. THE WATER CALLED FOR IN THE RECIPE IS DEFINITELY FOR THE WATER BATH, not the custard as it is written – it would have been soupy. I used a large pack of croissants from BJ’s – the big ones, and there is no way you need 15 of those. Probably used about 10 or so. I would also probably do and additional 1/2 recipe of the custard, which would have been a better amount of liquid. I baked it for 1 1/2 hrs, and then reheated two nights later to serve it warm. But the taste was still fantastic! Will definitely make again!

The recipe is not typed correctly. The water was for the water bath. And I did not cover mine. I let mine sit for about 30 min. before I baked it. Everyone loved it! This is one I will definitely make again.

I’ll be you are supposed to use the 1 quart of water as a water bath to bake the bread pudding in. If you mix together the evaporated milk, coconut milk and 5 eggs you have approximately 4 1/4 cups of liquid which is plenty to cover the croissants.
