Hash Brown Tostadas

Ingredients

  1. One 15-ounce can black beans, drained
  2. One 4-ounce jar diced pimentos, drained
  3. 1 lime, zested and juiced
  4. 1/2 small red onion, diced
  5. A sprinkle of chopped fresh cilantro
  6. Kosher salt
  7. One 30-ounce bag frozen hash browns, thawed
  8. 1 cup grated pepper jack cheese
  9. 4 tablespoons (1/4 cup) butter, melted
  10. Kosher salt and freshly ground black pepper
  11. Nonstick cooking spray, for the waffle iron
  12. Butter, for frying
  13. 4 large eggs
  14. 1/2 cup store-bought guacamole
  15. 1/2 cup store-bought salsa
  16. 4 tablespoons sour cream
  17. Hot sauce, to taste

Instructions

  1. For the black bean salsa: Toss together the black beans, pimentos, lime zest and juice, onion, cilantro and salt to taste in a bowl. Set aside.
  2. For the tostadas: Preheat a waffle iron.
  3. Mix the hash browns with the pepper jack, butter and salt and pepper to taste in a large bowl. Spray the waffle iron with cooking spray. Scoop a generous cup of the hash brown mix into each well of the waffle iron and cook until well browned and crispy, about 5 minutes. Set aside, keeping covered with a towel to keep warm.
  4. For the toppings: Place a nonstick skillet over medium heat and add some butter. When melted, fry the eggs sunny-side up until the whites are set, about 3 minutes.
  5. Place a hash brown tostada onto a plate and top with a fried egg. Spoon over some black bean salsa along with some guacamole, salsa, sour cream and a drizzle of hot sauce, then dive in.

I made this for breakfast after watching the lockdown special on 5/14/2020. It turned out fantastic! I added a diced jalapeno and a diced poblano pepper to the salsa. I only made half a batch and it still made 3 round waffles. I am going to freeze the extra one- there’s only two of us and this was a LOT of food!  It took 3 minutes to get to crispy with my waffle maker on 5- the highest setting. Please note that if you use an older round waffle maker  that makes one at a time the grease from the butter and melting cheese will run all over the counter…nonetheless, this is a keeper!  I have to say I REALLY like these lockdown specials- Ree just seems so much more friendly and funny, and with her kids and nephew acting as the video team- she really seems to be having a lot of fun! I also love her straight and shorter hair. It’s like the rest of us, cutting our own hair and not messing with it too much. I also thought it was fun that she’s wearing leggings, a shirt and what looks like a Lularoe kimono. HA! My lockdown outfit!

I saw this last week on a the Pioneer Woman and just happened to have all the ingredients on hand . I had deli made black bean salsa so that made the process a little faster. Delicious!

Amazing recipe! We loved it. I didn’t have pepper Jack cheese so I used colby-jack and added red pepper flakes.
