Ham, Potato and Broccoli Casserole

This casserole is tasty, simple to make, and filling. You can season the potatoes before baking or try adding some macaroni pasta. When you’re too lazy to cook, freeze this dish and bake it anytime you’re hungry! can also be prepared with cooked chicken leftovers.

Ingredients

  1. 1 (16 ounce) package frozen French fries
  2. 1 (16 ounce) package frozen chopped broccoli
  3. 1 ½ cups cooked, cubed ham
  4. 1 (10.75 ounce) can condensed cream of mushroom soup
  5. 1 (10.75 ounce) can milk
  6. ¼ cup mayonnaise
  7. 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Spray a 9×13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
  3. Bake uncovered in preheated oven for 40 minutes.

Overall a good comfort food except it is bland. I used frozen O’Brien potatoes which added some onions and peppers to the dish. For some reason my grocery store does not carry frozen chopped broccoli so I used riced broccoli instead and accidentally grabbed a can of cream of broccoli out of my pantry. Lastly I used Cheddar cheese as a taste preference. After reading comments I cut the milk amount in half.

I didn’t have any French fries, instead had tater tots in the freezer, so used those. I see some folks saying it’s too soupy, but I had none of that. The dish turned out really good! The only thing, the broccoli was a bit crunchy ( not a bad thing), so I think I would steam it for just a couple minutes prior to laying it on the tater tot’s. I nice quick and easy meal! Thanks!

It was really easy to make and tasted really good. The family loved it. I used a leftover spiral cut ham, which added to the flavor. The only thing I didn’t care for about the recipe, it was too soupy when it finished cooking. I would suggest using only 1/2 a can of milk instead of a full can, or maybe using raw potato (either sliced or shredded) rather than frozen french fries. Overall, we’ll be making this again with some minor modifications.

We loved this dish. Even better the second day! Read the reviews and took their advice to season the potatoes before baking. Added salt, pepper, and onion powder to potatoes after layering them in the pan. Added extra sharp cheddar cheese shreds on top of ham, then added sauce. Sprinkled buttered crumbs mixed with Parmesan to the top then finished baking for 15-20 minutes. Comfort food!

This was a great base. In the future I will thaw the vegetables first and brown the fries. I used seasoned fries and added a package of ranch dressing mix. I also added a tsp of garlic powder and subbed cheddar. Thank you for sharing this quick and easy recipe!

I used organic frozen green peas instead of broccoli. The cheese I had on hand was a yellow and white blend with medium hot peppers. I grated that and added 2 T shredded Parmesan. I used only a 1/2 can of the milk. I used organic frozen Yukon gold French fries. This was one of the best casseroles I’ve ever made. Just hubby and me. So glad for leftovers the next night.

Excellent recipe. I cut up small red potatoes without pre-cooking and cut up a whole broccoli and used cheddar cheese. Very yummy!!

Better than I expected. I will make it again. I used hash browns for my potato. Accidentally bought fat free cream of mushroom soup but even that was good. Everything else in my casserole was the same as recipe. There was a ton of flavor. My 14 year old loved it and he can be picky. The only change I would make is to cook it a little longer. Everything thing was cooked but the hash browns could use more time.

Used garlic mashed potatoes and fresh steamed broccoli instead of frozen. Substituted cream of celery soup for mushroom. Great way to use my leftover ham.

This is a great recipe to use left over ham and I especially loved that I had almost every ingredient on hand. I didn’t have evaporated milk, so I subbed cheddar cheese soup. I also mixed in the Parmesan cheese with the soup mixture and a sprinkled cheddar cheese on top before baking. I baked it for an extra 10 mins and it was delicious!

I used hash brown potatoes. Added a little creamy horseradish and onion. Mixed it all together, not layered. Do not use Parmesan cheese for the top! It does not melt well. I used cheddar. I’ve made this with kielbasa also. Yummy either way. Great, easy recipe.

Lined the bottom with tater tots instead of fries. Use 2 bags of 12oz broccoli next time instead of 1. Delish, a hit with everyone!

I do a whole bag of hash browns, unthawed and just mix everything in a large bowl. I also add an extra can of mushroom soup and a little extra milk , about 7 sliced mushrooms, salt pepper and top it with extra sharp cheddar cheese. Really good and easy!!????
