Ingredients
- 3 eggs
- 3 tablespoons milk
- 2 tablespoons butter
- 2 potatoes, cubed
- ½ cup cubed fully cooked ham
- ¼ cup chopped onion
- 1 ½ teaspoons minced garlic
- ¼ cup water, or as needed (Optional)
- salt and ground black pepper to taste
- ¼ cup shredded Cheddar cheese
Instructions
- Set an oven rack about 6 inches from the heat source; preheat the broiler.
- Beat eggs and milk in a bowl; set aside.
- Melt butter in a large, oven-proof skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.
- Pour egg mixture over vegetable mixture. Cook, without stirring, until eggs are slightly browned on the bottom.
- Broil in the preheated oven until eggs are nearly set, about 5 minutes. Sprinkle Cheddar cheese over eggs and continue broiling until frittata is completely set and cheese is melted, about 5 minutes more.

I’m enjoying this recipe right now. It is delicious! And so easy to make. All I needed to add was some toast and we had a full supper. Nothing else needed.
As described, this is a very versatile recipe, that we both LOVED first time around. I used spinach, bell pepper, and cheddar cheese… (that’s what I had on hand) This a keeper, for any time of the day!
Made this today, my first attempt at a frittata. Wanted to try a gluten-free alternative to quiche and this delivered! I did make some changes to the recipe: – After reading reviews I upped number of eggs from 3 to 4 – I did not add the ham to the potatoes, garlic and onion during saute step. I figured the ham was alredy cooked and this might overcook it. Instead I coated with 1 TBSP mustard and combined with veggies after they were done cooking. – I realized I do not have an oven-safe skillet, oops. So after cooking veggies I transferred them to a Pyrex pan, added the ham and egg mixture, and cooked for a minute on the burner to slightly brown the eggs on the bottom. Then transferred Pyrex to the oven to finish cooking.
We loved it, just enough for two. I used grated zucchini instead of water, also added fresh chopped tomatoes for last couple minutes of broiling. Thanks!
This is a very good basic recipe with flexibility to add other veggies & seasonings. I put my broiler on 400 and using 4 eggs (vs 3), I broiled it for about 8 minutes until the eggs started pulling away from the pan. Super easy and very good.
I used hash browns and added some broccoli. We enjoyed this dish a lot.
Great starter recipe for frittata. I added shredded hash browns to mine, you can put pretty much anything in this dish. It’s really good as leftovers, just store the wedges in the fridge and reheat in microwave, actually better the next day.
There was nothing in the house to eat. So I got out a few eggs, a little onion, some cilantro and some ham and wow was this ever good! I would do it again in a heartbeat and the best thing was it was the first time I ever made a frittata! Great recipe!
This is a Sunday brunch staples at my house. I do two eggs per person I’m feeding. I stir in all ingredients except the cheese into the eggs. Then poor all in the pan. Mostly because I’m lazy. Then keep cooking on stovetop till eggs set up. Sprinkle on cheese and bake till cheese is melted in oven. Couldn’t be easier.
The recipe has a lot of potential. I used a 10″ ovenproof pan and used 4 eggs instead of 3. Still it was a little thin. This is supposed to be 4 servings but barely was enough for 3 servings. (2 adults and 1 child) As the submitter suggests it is a good way to use up odds and ends in the refrigerator. Peppers or green chilies would be an excellent addition. Also, if you have leftover cooked potatoes you could certainly use those. With a bit of tweaking this would make a fast weeknight dinner served with a large green salad to round out the meal.
