Ingredients
- 6 ounces cream cheese
- 4 ounces thick-cut ham, chopped
- 1 cup shredded Swiss cheese
- 1/2 cup shredded mozzarella
- 1/2 cup chopped pickles
- 1 tablespoon Dijon mustard
- 1 dash cayenne pepper
- 1 dash paprika
- 8 jalapenos, stemmed, halved lengthwise and seeded
- 1/2 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 2 large eggs
- 2 tablespoons milk
- 5 cups buttery crackers, such as Ritz, ground in a food processor
- Oil, for frying
Instructions
- Combine the cream cheese, ham, Swiss, mozzarella, pickles, mustard, cayenne and paprika in a medium bowl.
- Stuff the jalapeno halves with the filling and place on a baking sheet lined with parchment.
- Set up 3 bowls. In the first, mix together the flour with a pinch of salt and a few cracks of pepper. In the second, beat the eggs with the milk, a pinch of salt and a few cracks of pepper. In the third, place the cracker crumbs.
- Coat the stuffed peppers first in the flour mixture, then in the egg mixture and then in the cracker crumbs.
- Heat 2 inches of oil in a heavy-bottomed pot until a deep-frying thermometer registers 365 degrees F.
- Fry the stuffed jalapenos in batches until golden brown on all sides, about 2 minutes per batch. Alternatively, you can bake the poppers in the oven at 350 degrees F for 30 minutes.

Just omit the fatty, unnecessary ham/pork–& you’re good to go! They’re great with flavored pickles too! Try garlic etc.!
Delicious! My husband LOVED these.
I made these last night to have while watching the Buffalo Bills game! We did them in the air fryer @ 370 degrees for 8-9 minutes! They were delicious and we had them with ranch dressing- yum! The other reviewers were right, you don’t need 5 cups of cracker crumbs and the dill pickles make the poppers over the top! Highly recommend for a guilt free appetizer!
I had an abundance of jalapeño peppers from my garden so I thought I would give this recipe a try. The pickles did sound odd, but they made the poppers! I decided to spray them with cooking spray and bake them. They were great and I didn’t have to use any oil.
These are a crowd pleaser! I agree the pickles are a game changer! We doubled them & followed the baking directions rather than frying them. They were delicious!
I’ve made these poppers several times. I don’t change a thing as the are perfection as is. I always find it hysterical when reviewers give thier tweaks. They don’t have a show lol! I’m a popper fanatic and these are amazing. You can also use the filling to serve on crackers! The pickles are the game changer.
I substituted the Swiss with Monterrey jack cheese and they were delicious! I would recommend cutting back on the amount of cracker crumbs. I only needed approximately 3 cups of crumbs to coat all of the poppers. I served them with jalapeño-cilantro dip, but they also tasted great by themselves.
So tasty! I think next time I will leave the seeds for a little more spice. Thank you!
