The only ingredients you need are puff pastry, cheese, and herbed cream cheese to make this, which is my go-to finger dish for every party.

Ingredients

  1. 2 pounds ground turkey
  2. 12 baby carrots, finely chopped
  3. 1 medium onion, chopped
  4. 4 stalks celery, chopped
  5. 4 medium red potatoes, cut in 1-inch pieces
  6. 1 (15 ounce) can tomato sauce
  7. 1 (15 ounce) can whole peeled tomatoes, crushed
  8. 1 (15 ounce) can peas, undrained
  9. 1 (15 ounce) can green beans, drained and rinsed
  10. 1 (15 ounce) can kidney beans, rinsed and drained
  11. 1 (15 ounce) can whole kernel corn, drained and rinsed
  12. ground black pepper to taste
  13. 1 pinch seasoned salt (such as Morton® Nature’s Seasons® Seasoning Blend), or to taste
  14. 1 pinch ground thyme
  15. 1 bay leaf, or more to taste
  16. 1 cup water, or more to taste

Instructions

  1. Crumble turkey into a stockpot over medium-high heat. Cook and stir until evenly browned, crumbly, and no longer pink, 7 to 10 minutes. Drain and discard any excess grease.
  2. Stir carrots, onion, and celery into the turkey; cook and stir until vegetables are soft, about 5 minutes. Add potatoes, tomato sauce, tomatoes, undrained peas, green beans, kidney beans, and corn. Season with pepper and seasoned salt. Stir until evenly distributed. Add thyme and bay leaf.
  3. Pour water into the pot and bring to a simmer. Cover and cook, stirring regularly and adding more water as needed, until potatoes are tender, about 1 hour.
  4. Add more water or tomato sauce to give it extra broth.

It was pretty tasteless and a lot of trouble. I will not make it again.

I would give this soup five stars, but, I did have to make some adjustments. I added another can of tomato sauce and another cup of water. There was too little liquid with the original recipe ingredients and the potatoes would not have cooked. I also thought the broth was bland, so, I added some chicken bouillon for flavor. My suggestion would be to use chicken or beef broth instead of the water. Once adjustments were made the recipe was delicious!
