Ground Beef Teriyaki

Despite having all the flavors of French toast, the texture of these tiny cups is most comparable to that of Dutch baby pancakes. Similar to Dutch babies, they dramatically puff while baking and deflate dramatically after being removed from the oven. I enjoy topping them with some yogurt and fresh fruit.

Ingredients

  1. 1 pound lean ground beef
  2. 3 medium carrots, peeled and diced
  3. ½ large red bell pepper, diced
  4. ¼ teaspoon salt
  5. ¼ teaspoon ground black pepper
  6. 1 large zucchini, diced
  7. ½ cup soy sauce
  8. ⅓ cup water
  9. 2 tablespoons water
  10. 2 tablespoons white sugar
  11. 2 tablespoons brown sugar
  12. 2 tablespoons rice vinegar
  13. 1 tablespoon cornstarch
  14. 1 teaspoon onion powder
  15. ½ teaspoon ground ginger
  16. ½ teaspoon garlic powder

Instructions

  1. Combine ground beef, carrots, and bell pepper in a large skillet over medium to medium-high heat; saute for 4 minutes. Sprinkle with salt and pepper. Add zucchini and continue to cook until ground beef is fully cooked through and vegetables are crisp-tender (to your preferred “doneness”), about 5 more minutes.
  2. Meanwhile, combine soy sauce, 1/3 cup plus 2 tablespoons water, sugar, brown sugar, vinegar, cornstarch, onion powder, ginger, and garlic powder in a small bowl for the sauce. Whisk until well blended.
  3. When the meat and veggies are cooked, whisk sauce once more and pour into the skillet. Use a spatula to mix and get everything off the sides and bottom.
  4. Turn the heat up until sauce begins to bubble, stirring occasionally until mixture becomes thickened and glossy. Turn heat off. Taste and adjust seasonings.
  5. I used red bell pepper, carrots, and zucchini, but you can certainly change up the veggies to use what you have on hand.

Made it twice. Followed recipe exactly the first time and it was yummy. Second time, added hot chili sauce, red pepper flakes, water chestnuts, sesame seeds, and halved the sugars. Excellent!
