Grilled Venison Scape Sandwich

This recipe was developed as a result of my search for fresh, garden-harvested hardneck garlic scapes to utilize in my cooking. The family was delighted. It is quick, simple, and wholesome. The same applies to beef. Serve alone or with your favorite sauce (Thousand Island dressing is a good addition).

Ingredients

  1. 1 ½ pounds venison, slightly frozen and sliced into 1/16-inch slices
  2. 8 garlic scapes, minced
  3. ⅓ cup canola oil
  4. ¼ cup soy sauce
  5. 4 hamburger buns, split
  6. 4 slices sharp Cheddar cheese (Optional)

Instructions

  1. Place venison strips in a bowl; sprinkle with garlic scapes. Pour in canola oil and soy sauce; mix well. Cover bowl and let venison marinate for at least one hour.
  2. Preheat grill fitted with fine grate grill topper to medium heat.
  3. Evenly spread venison on the grill topper. Stir occasionally to evenly cook meat until no longer pink, about 10 to 15 minutes.
  4. Warm hamburger buns on warming rack of grill. Divide venison among the buns and top with Cheddar cheese.
  5. I used a grill topper with a diamond pattern. It allows the grill flavor without losing small pieces through the grate.

Sorry, I didn’t have scapes. I had to google what they were. I sprinkled a little garlic powder in the marinade. This was great! My whole family loved it!
