Ingredients
- ½ cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 2 medium eggplants, cut into 1/2-inch slices
- 3 medium zucchinis, cut into 1/2-inch slices
- 2 medium green bell peppers, cut into 1/2-inch slices
Instructions
- Whisk olive oil, soy sauce, balsamic vinegar, salt, and pepper in a large bowl. Toss eggplants, zucchinis, and bell peppers in soy sauce marinade. Marinate for about 45 minutes.
- Preheat grill for medium heat and lightly oil the grate. Remove vegetables from marinade, shaking off excess.
- Grill vegetables on preheated grill until tender, 10 to 15 minutes, brushing vegetables with marinade. Transfer cooked vegetables to a platter and serve with any remaining marinade.

Made these exactly as written, except I cut back on the grilling time. 10 to 15 minutes would have been overcooked for my preferences. I like my veggies al dente. I don’t make a lot of eggplant, but it turned out to be my favorite part! I thought the veggies needed a sprinkle of salt before serving to bring out the flavors. I’ll make this again. I highly recommend you use a grill pan for this.

Easy, delicious marinade. I made it for company and used baby eggplants, mushrooms, zucchini, red onion, orange and yellow bell peppers.
I followed the recipe very closely except for using yellow squash instead of zucchini (I prefer them), adding crimini mushrooms, and onions, and substituting red and orange peppers for the green peppers (also a personal preference). The marinade was spot on. I served it over quinoa. Will definitely fix again.
I look for easy and healthy dishes for the summer. Grilled veggies are the perfect choice. This dish was easy and tasty. It is nice enough to serve company. I find that whenever I serve grilled veggies I have to double the amount I prepare. Everyone loves them.

Easy and tasty summer dish
This recipe is simple and delectable. I added a capful of lemon juice for taste. I used olive oil instead of sesame oil and skipped the sesame seeds. The only downside of this dish was that the sauce burned and sticked to the skillet.
