Grilled Red Pepper-Tomato Sauce

Ingredients

  1. 2 red peppers, grilled, peeled and chopped
  2. 2 plum tomatoes, grilled until charred on all sides, and coarsely chopped
  3. 2 tablespoons red wine vinegar
  4. 1 tablespoon honey
  5. 1/4 cup chopped fresh cilantro leaves
  6. 1/4 cup olive oil
  7. Salt
  8. Freshly ground black pepper

Instructions

  1. Combine the pepper, tomatoes, vinegar, honey and cilantro in a food processor and process until smooth. With the motor running, slowly add oil and season with salt and pepper.

I absolutely love this sauce. Whenever I grill, I make a batch of this and serve it with crostini. I modify the herb (cilantro to go with my menu (so occasionally toss in fresh basil or mint instead of cilantro. Hands down one of my favorite, go-to appetizers! Also great with fresh mozzarella!

It needed a little zip so I added some crushed red peppers and a splash of balsamic. Otherwise it was easy & delish.

Made this sauce from tomatoes from the garden and served it over store-bought gnocchi. It was great! Next time I’m grilling, I’ll throw some tomatoes and peppers on the grill, just so I can make this sauce for later in the week! I didn’t need the olive oil, so I didn’t add it or it would have made the sauce too soupy… maybe because I used garden tomatoes instead of plum tomatoes. I figured it made the sauce a little healthier anyway.

The red wine vinegar gives this sauce a great punch! It was easy and delicious; I used it as a new standby on an old favorite…meatloaf.
