Grilled Potato Salad

Ingredients

  1. 2 pounds Yukon Gold potatoes, sliced into 1/4-inch rounds
  2. 1 tablespoon extra-virgin olive oil
  3. 1 teaspoon kosher salt
  4. 1/4 teaspoon freshly ground black pepper
  5. 2 tablespoons lemon juice, from one medium lemon
  6. 1 teaspoon lemon zest
  7. 3 tablespoons extra-virgin olive oil
  8. 2 tablespoons finely grated Parmesan, plus shaved for garnish
  9. 1/4 cup chopped fresh basil
  10. 2 tablespoons chopped fresh parsley

Instructions

  1. For the potatoes: Preheat a grill pan over medium-high heat. Place the potato slices in a large bowl and toss with the olive oil, salt and pepper. In batches, grill the potatoes until cooked through and golden, about 4 minutes per side. Transfer to a large serving bowl and set aside to cool while you make the dressing.
  2. For the dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil and Parmesan. Pour the dressing over the potatoes, then add the basil and parsley, and toss gently to coat. Garnish with shaved Parmesan, and serve.

Love the texture of the potatoes.  I grilled the potatoes till grill marks were seen on the potato slices and then popped them into the oven to finish.  Watch the lemon in the dressing.  It can be overwhelming and really tart.

Be sure to allow the dressing to come together. I made it and allowed it to sit for about 2 hours. 

I grilled half the potatoes as instructed and finished the rest in the oven. The grilling takes a while for 2 pounds and didn’t add as much as I thought. This is all about the dressing.
Once served, this dish was light and refreshing!!

Tasty and simple.  We made the entire meal.  In the show however Giada does recommend making the potato salad and letting it marinade at room temperature for awhile so that the flavors blend.  I would recommend doing that as the potatoes were just a touch dry as I did not follow that direction, later on, we tasted some left-overs and they were perfect.
