Ingredients
- 2 (1 – inch- thick) pork chops
- Kosher salt
- Freshly ground black pepper
Instructions
- Sprinkle both sides of the chops generously with salt and pepper. Allow to sit at room temperature for 15 to 30 minutes. Meanwhile, prepare a charcoal grill with hot coals. When the coals are hot, grill the chops for 5 minutes on each side, until almost cooked through. Remove to a platter and cover with aluminum foil. Allow to rest for 15 minutes.

Loved it. Unlike Ms. Tuksock I didn’t own an instant read thermometer until I was 50. Common sense will prevail long after her batteries die.
This is a recipe? No mention of minimum temperature the chops are supposed to reach. 5 minutes with an unknown grill temperature.
I find that a simple 2 hour salt and sugar brine prior to cooking makes an enormous difference in the juiciness of the chops!
This simple recipe has worked perfectly the several times I’ve used it. The pork chops are cooked perfectly, and are moist and delicious.
