Grilled Polenta and Veggies

Ingredients

  1. 1/2 cup extra-virgin olive oil
  2. 1/4 cup chopped fresh herbs (basil, mint and/or parsley)
  3. 1 tablespoon ground coriander
  4. Freshly ground pepper
  5. 1 bulb fennel, fronds chopped and base cut into 8 wedges
  6. 1 bunch broccoli, cut into florets (with some stems attached)
  7. Kosher salt
  8. 2 oranges, cut crosswise into thick slices
  9. 2 large beefsteak tomatoes, halved crosswise
  10. 4 portobello mushroom caps
  11. 1 large head radicchio, quartered
  12. 1 1-pound tube prepared polenta, cut into 8 slices
  13. 1/2 pound haloumi cheese, cut into 4 slices

Instructions

  1. Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  2. Mix the olive oil, herbs, coriander, 1 teaspoon pepper and a handful of fennel fronds in a small bowl.
  3. Brush the fennel wedges and broccoli with the herb oil and season with salt. Cook on the cooler side of the grill, turning once, until marked and tender, 15 to 20 minutes. Remove to a platter. Meanwhile, brush the oranges, tomatoes, mushrooms and radicchio with the herb oil and season with salt. Grill over direct heat, turning once, until marked and tender, 10 to 15 minutes. Add to the platter.
  4. Brush the polenta and haloumi with the herb oil and grill over direct heat, turning once, until marked, 5 to 10 minutes. Add to the platter. Season with salt and drizzle with any remaining herb oil.

Different, but flawed. The idea seemed to be to have a wide range of flavors, but not all of them worked. The cheese and oranges were very nice surprises. The herb oil was pretty typical and didn’t enhance the other ingredients. The fennel takes much longer to cook than the broccoli despite what the directions say so it will come out tough unless you cook it longer and finish it under direct heat. And the radicchio, which adds a bitter accent raw that should be used sparingly, became exponentially more bitter grilled and was eight shades of nasty. I’ll use red peppers instead next time and consider adding a middle eastern sausage as a different accent. (I’m not a vegetarian, obviously. By the way, although this recipe is easy, it’s pretty high maintenance during the grilling with so many ingredients cooking at different speeds. Not recommended as an alternative entree for vegetarian guests at a barbecue.
