Grilled Pineapple Mezcal Margarita

Subtly sweet and smoky, this is the perfect margarita. The combination of mezcal and tequila keeps the drink from being overly smoky. You can see part of the charred pineapple in the drink from muddling at the beginning — so it’s a drink that looks just as good as it tastes!

Ingredients

  1. Two 3 1/2-inch pineapple spears
  2. 1/2 ounce fresh lime juice plus 1 lime, halved
  3. Kosher salt, for rimming
  4. 1 ounce mezcal
  5. 1 ounce tequila
  6. 1/2 ounce orange liqueur, such as Cointreau
  7. 1 ounce fresh pineapple juice

Instructions

  1. Heat a grill pan over medium-high heat until hot, then add the pineapple spears and grill until all sides have grill marks, about 3 minutes per side. Set aside to cool.
  2. Rim a rocks glass by running a lime half around it, then dipping in the salt. Fill the glass with one grilled pineapple spear and fill with ice to the top.
  3. Add the other pineapple spear to a cocktail shaker and muddle until the juices are released. Add the mezcal, tequila, orange liqueur, lime juice and pineapple juice. Fill the shaker with ice and shake to combine. Strain the drink over the prepared glass and serve.
