This mai tai’s grilling of the citrus brings out the natural flavors, making it one incredibly simple cocktail. For quick beach cocktails for a crowd, grill up an entire pineapple and a few more limes. Grilled orange wheels and Bing cherries are used as a garnish.

Ingredients
- ¼ cup white sugar
- 1 lime, halved, or more to taste
- ¼ pineapple, cut into wedges
- ice
- 1 fluid ounce gold rum
- ½ fluid ounce silver rum
- ½ fluid ounce triple sec
- ½ fluid ounce orgeat almond syrup
Instructions
- Preheat grill for medium heat and lightly oil the grate.
- Place sugar in a shallow bowl. Dip lime halves in sugar to coat.
- Grill lime and pineapple wedges, turning occasionally, until lightly browned, 5 to 10 minutes. Remove from grill and let cool.
- Fill a cocktail shaker and Old Fashioned glass with ice.
- Squeeze 1/2 fluid ounce lime juice and 1 fluid ounce pineapple juice into the shaker. Add gold rum, silver rum, triple sec, and orgeat syrup. Cover and shake until the outside of shaker has frosted. Strain into the glass and garnish with a grilled pineapple wedge.

I’d skip grilling the limes, it just made them incredibly sour and the sugar just made it really sticky and difficult to juice them. Everything else was delicious, albeit hard work for a cocktail. in the future I’ll probably glaze the pineapple in brown sugar while grilling, and just use normal lime juice.
I had a slushy version of this drink at a restaurant and loved it. Was very happy to find this recipe. I used a full pineapple and adjusted ingredients accordingly. As I prefer less sweet I omitted the sugar, triple sec and almond syrup. I put the grilled pineapple, rum, ice cubes and squeezed lime juice into a blender. Had this as a slushy and also tried it as a tall drink by adding lime sparkling water and quartered limes to the slushy mix. Loved the flavor and will make this again. As the rum is already mixed in, any leftovers can be put in the freezer and it will remain in slushy form.

I’m normally not a big fan of mai tai cocktails, but this was just so interesting with the grilled fruit that I had to try it. It was so good, I’d definitely make it again for a party.
