Grilled Panzanella

Ingredients

  1. Good olive oil
  2. 1 teaspoon minced garlic
  3. 1/2 teaspoon Dijon mustard
  4. 2 tablespoons champagne vinegar
  5. Kosher salt and freshly ground black pepper
  6. 1/2 hothouse cucumber, unpeeled, seeded and sliced 1/2-inch thick
  7. 1 large ripe tomato, cut into 1-inch cubes
  8. 10 large basil leaves
  9. 3 tablespoons capers, drained
  10. 1 red onion, sliced into 1/4 inch rounds
  11. 1 red bell pepper, seeded and cut into 3 large pieces
  12. 1 yellow bell pepper, seeded and cut into 3 large pieces
  13. 1/2 small ficelle, cut into 1-inch thick slices

Instructions

  1. Prepare a charcoal grill with hot coals. Brush the grilling rack with olive oil.
  2. In a small bowl, whisk together the garlic, mustard, vinegar, 1/4 cup olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
  3. Place the cucumber, tomato, basil and capers in a large bowl, sprinkle with salt and pepper and toss together. Set aside.
  4. When the grill is ready, brush 1 side of the onion slices and the peppers with olive oil. Place them, olive oil side down, on the grill and cook for 4 minutes. Brush the other side with olive oil, turn them over and continue cooking an additional 4 minutes. Remove the vegetables from the grill and place on a cutting board. Slice the peppers 1/2-inch thick, separate the onion rings and add them both to the cucumber mixture.
  5. Brush the bread slices on both sides with olive oil and toast them on the grill until golden. Add them to the cucumber mixture. Pour the reserved vinaigrette over the vegetables and toss together. Serve warm.

Perfect for Summer! Fresh veggies are a must. M LOVED it- only complaint: not enough bread. Next time get a bigger loaf- mix in half – keep other half for second grilling. Bread needs to be crunchy. Great for vegetarians and as app/side for summer grilling meals. Or a meal in itself

This recipe is one I turn to often. It elevates any grilled protein to a whole new level of mealtime perfection. I cooked it last night (January) indoors, on a stovetop grill pan. Still incredible. And don’t knock leftovers because of the toasted bread. I always make enough for dinner and lunch the next day. The bread soaks up the dressing overnight which is more than fine by me and mine.

Exceptional recipe! One I will definitely be making many many many times again!!!

I did change a few things, not many, but a few. I added orange, red and yellow bell peppers to add extra flavor, but most importantly, extra visual appeal. I also added in little balls of fresh mozzarella that I cut in half, just for some added protein and richness.
And finally, I used my absolute favorite sherry vinegar in place of the champagne vinegar because it’s just that wonderful and amazing!!!
Wow, I never New a Panzanella Salad could be sooooooooo delicious! And even still scrumptious the next day as well!!!

Omg this is delicious! What a beautiful salad… made this today… used balsamic vinegar instead and added some grilled corn… everyone loved it…. served it with some grilled salmon… wonderful meal…. next time I will add some grilled steak to this…. ❤️
