Since this bread contains no yeast, it is suitable for specific diets. If you choose, you can also use soy milk in place of ordinary milk. It’s rather dense, but delicious right out of the oven. On chilly mornings, especially, with butter and honey!

Ingredients

  1. 5 pounds skinned, deboned mahi mahi, cut into chunks
  2. ¾ (4.5 ounce) jar bottled minced garlic
  3. ½ cup butter, diced
  4. 1 large onion, diced
  5. 1 ½ lemons, juiced
  6. ½ cup dry white wine
  7. 1 ½ (10 ounce) cans diced tomatoes with green chile peppers
  8. salt and pepper to taste
  9. 8 ounces shredded pepperjack cheese

Instructions

  1. Preheat grill for high heat.
  2. Place mahi mahi in an aluminum foil pan, and toss with the garlic to coat. Distribute butter evenly throughout pan. Spread onions over fish. Pour the lemon juice, wine, and diced tomatoes with green chile peppers over the fish. Season with salt and pepper. Tightly cover pan with aluminum foil.
  3. Place pan on the grill grate, and cook fish 35 minutes, or until easily flaked with a fork. Sprinkle with cheese before serving.

Yummers! Had never had mahi mahi before, so I don’t have any reference to compare this recipe to, but this was fantastic! My husband also thought it was tasty! I didn’t have diced tomatoes with green chilis, but did have a can of each, which is what I used. We like a little heat, so also added crushed red pepper. Otherwise followed the recipe. Will be making again!

Love this recipe, we grilled two 6 oz pieces, used fresh tomato, jar garlic, wine, butter, salt and pepper, lemon,onion,wine. But,.. added a dash of Bay Seasoning. Left off the cheese. Served it over a bed of brown rice( Trader Joe’s frozen 3 min rice)Corn on the cob or kale salad. French bread/ and a glass of Chardonnay!!Sooo Yummy! Sorry I didn’t take a pic.

This was delicious. I also used fresh garlic, about 4 cloves. I had 1.5 lbs. of mahi, so I cut down on some things. The one little can of tomatoes covered all of the fish, and I thought it would be too much, but I loved eating the tomatoes and onions with the fish. It had such a nice, fresh flavor, even though the tomatoes were canned. It was easy and quick to make too. I baked it in the oven in a Pyrex dish wrapped completely in tin foil. I took it out after 25 minutes, but the fish didn’t seem done, so I cooked it to the full 35 minutes. Will definitely make again. Would probably be good with fresh cilantro or basil too.

butter in CI skillet the onion & mushrooms till onions turn pale then add fish cook lst side 5 min flip then add tomatoes then last 5 min add cheddar cheese YUM

I’ll give it 3 stars on taste only. First, instructions indicate grilling on “high”. That isn’t too specific. My grill can ramp up to over 500f. I did grill at 400f. Second, putting all of those ingredients in an aluminum pan, there is a lot of liquid. So, basically at that temperature with that amount of liquid, the fish simply poached and was over cooked at the 30 minute mark. Fortunately, the meat tasted good and was salvageable. I re-purposed the fish into fish tacos today. Since the taste was really good, mixing in some sour cream and picante sauce saved the dry over cooked fish. Thanks for your effort, but I’ll keep looking for another mahi mahi recipe.

I wanted to love it, after I added a lot of salt and cayenne it was pretty good. Not sure what I did wrong. The only change I made was using fresh garlic.

Great recipe, this is a keeper. I cut it down for two with out any leftovers using just two fillets and I baked it in the oven at 450 degrees for 35 minutes covered with foil. Nice bite to it. I will definitely be making this again.

This recipe was fast and easy with very little clean-up. I used fresh tomatoes and added crushed red pepper for the heat. I was serving with zucchini, so I just sliced the zucchini thin and placed on top of the other vegetables. Since it was raining I just cooked in the oven. The fish was moist and the veggies gave lots of flavor. The meal got rave reviews from my husband and brother. The garlic and onion are a must! I don’t know why only one of the pictures actually looks like the recipe with the tomatoes. PS – I forgot the cheese too but I don’t think it’s needed.

This was amazing! I followed other reviewers suggestions. I used 3 frozen fillets from BJs (defrosted) so I had to tweak the recipe. I sprayed some foil with Pam and put it on top of a grill pan. I put slices of onion and bits of butter over the fish (about 2 tbs). I used a full can of Rotel, added about 1 tbs of minced garlic, 3 tbs of white wine and salt and pepper. I poured all over the fish and then squeezed a half of a lemon all over it. I grilled it on high heat for about 25 mins. Perfection! I can’t wait to make it again!

i was so hesitant at first. i kept the fish in fillets and only did 3 so i modified the ingredients to the smaller serving. this was absolutely delish. the people who dislike onions or tomoatoes ate it all. will definitely keep in my regular recipe rotation.

Used catfish, because sustainable (US) Mahi Mahi was not available and left the fillets whole (skinned and deboned). Also, I changed the recipe to 5 servings, which used 2 pounds of fish. Baked in the oven at 425 degrees for 25 minutes and came out perfectly, thanks to all of those who put temp and bake times. Served roasted asparagus on the side. You can put the asparagus on a roasting pan, drizzle with olive oil and spices to your liking, roast in oven on rack below or next to the fish for 10 minutes, flip, 5 more minutes for 2 pounds of asparagus.

This was so yummy. I baked mine covered at 450 deg. for 20 minutes. I scaled back and only did 2 fillets, whole, and just used a whole tomato diced instead of canned. Also topped with parmesan.

I started with the original recipe but just for 2 in pyrex baking dish in oven. Fantastic ! Now I use a larger baking dish and add fresh Asparagus next to the fillets from the start …. perrrrrfect side . even works on the grill
