Ingredients

  1. 5 pounds chicken tenders
  2. 5 cups fresh orange juice
  3. 1 cup fresh lemon juice
  4. 1 cup avocado oil
  5. 1 cup Worcestershire sauce
  6. 1/2 cup mayonnaise
  7. 1/4 cup plus 1 tablespoon Hungarian paprika
  8. 1/4 cup plus 1 tablespoon smoked paprika
  9. 1/4 cup plus 1 tablespoon garlic powder
  10. 1/4 cup plus 1 tablespoon onion powder
  11. 1/4 cup yellow mustard
  12. 3 tablespoons mild chili powder
  13. 2 tablespoons coriander powder
  14. 2 tablespoons finely ground black pepper
  15. 5 teaspoons kosher salt
  16. 2 yellow onions, chopped
  17. 1/2 fresh green bell pepper, sliced
  18. 1/2 fresh jalapeño, diced with seeds

Instructions

  1. Mix together the chicken, orange juice, lemon juice, avocado oil, Worcestershire sauce, mayonnaise, Hungarian paprika, smoked paprika, garlic powder, onion powder, yellow mustard, chili powder, coriander powder, black pepper, salt, onions, bell peppers and jalapeño in a large bowl. Let marinate, covered and refrigerated, for 2 hours.
  2. Preheat a grill.
  3. Grill the chicken, carefully rotating every 10 seconds, until it is thoroughly cooked but not dry, about 15 minutes.
