Grilled Chicken Drumsticks

These alfajores, also known as dulce de leche cookies, are buttery, sweet, and somewhat vanilla-flavored. These are incredible! Given to me by a chef who coaxed the Peruvian street vendor into giving him the recipe.

Ingredients

  1. 1 yellow onion, chopped
  2. ½ white onion, chopped
  3. 5 cloves garlic, sliced
  4. 16 chicken drumsticks
  5. 3 tablespoons chopped fresh cilantro
  6. 2 teaspoons dried oregano
  7. 2 teaspoons ground cumin
  8. 2 teaspoons ground thyme
  9. 1 teaspoon garlic powder
  10. salt and ground black pepper to taste
  11. 2 large lemons

Instructions

  1. Mix yellow onion, white onion, and garlic together in a bowl.
  2. Season chicken drumsticks with cilantro, oregano, cumin, thyme, garlic powder, salt, and pepper. Place chicken into the bowl with onion mixture. Squeeze lemon juice over the chicken, slice the rinds, and place into the same bowl. Cover and let sit in a refrigerator, 20 to 24 hours.
  3. Preheat an outdoor grill for medium heat and lightly oil the grate.
  4. Cook on the preheated grill until an instant-read thermometer inserted into a drumstick reads at least 180 degrees F (82 degrees C), 30 to 45 minutes.
  5. About 12 hours in, I switched the chicken and lemon marinade from the container to a large, freezer-sized, zip-top bag just to make sure the flavors blended. You can do this however you want; no container and just a bag. Or even just the container or a bag.

Excellent! I did not add the lemon until the last 4 hours to make sure it didn’t alter the texture to0 much. Good balance of flavor an simple. Thanks!
