Scrambled eggs and various cheeses within an ordinary grilled cheese sandwich!

Ingredients
- 1 large egg
- 2 tablespoons milk
- ½ teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic-pepper seasoning
- ⅓ cup Cheddar-Jack cheese
- cooking spray
- 2 teaspoons butter, softened
- 2 slices bread
- ⅓ cup shredded mozzarella cheese, or more to taste
Instructions
- Whisk egg, milk, salt, onion powder, and garlic-pepper seasoning together in a bowl until well combined and pale yellow in color. Dump in Cheddar-Jack cheese and stir until thick.
- Spray a skillet with cooking spray and set over medium-low heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Remove to a plate.
- Lightly butter one side of each bread slice.
- Spray the skillet again with cooking spray. Put one slice of bread, buttered-side down, in the pan. Top with 1/2 of the mozzarella cheese, the egg mixture, the remaining mozzarella, and the remaining bread, buttered-side up. Cook until bread is toasted and browned, 1 to 2 minutes. Flip and cook until the other side is browned and the cheese is melted, another 1 to 2 minutes.
- Transfer to a plate and let cool for a minute before serving.
- You can use 2 eggs if you’d like.
- Other cheeses and spices can be substituted.

I’m a big fan of grilled cheese for breakfast and this was excellent. I chose to rate it at 4 stars because it would be so much better with a multigrain bread. Not a big fan of powdered garlic and onion so I used seasoned salt, fresh ground black pepper and a good pinch of dried chives. I also used the cheeses at hand…sharp cheddar and Swiss. There’s lots of room for creativity with this…cream cheese instead of cheddar, with dill flavored Havarti, for example. The recipe actually had me out of bed and preparing breakfast…at 5AM!
I agree with Tammy Lynn. The amount of seasoning for one egg is too much. Only change I made was half the salt. But 1/2 tsp of onion and garlic powder (didn’t have garlic pepper powder) was too much. Next time I would half, or – even use 1/8 tsp each. Also, personal preference, next time would use a sharp or pepper Jack cheese vs mozzarella. Really like this twist to your breakfast sandwich rotation!! Just need to tweak to our tastes. Will make again with changes. Thanks for sharing!
I loved it. I used cheeses I had here. Would love to try it with pepperjack and mozzarella. I had an Italian blend, muenster, and another blend. Very good…for me 1/2 a sandwich would have been filling. (But I ate the whole thing…too good.)
The sandwich is good. I thought it called for too much of the seasonings for just one egg. I only used a sprinkle of each spice, otherwise it would not have been good to me. I also cut down on the cheese that was put into the egg. It’s an interesting idea for a breakfast sandwich.
