Green Goddess Dip

Ingredients

  1. 1 ripe avocado, halved, pitted and peeled
  2. 2 scallions, green and white parts, coarsely chopped
  3. 1/4 cup fresh tarragon
  4. 1/4 cup fresh parsley
  5. 3 tablespoons white vinegar
  6. 3/4 cup buttermilk
  7. Salt
  8. Vegetable sticks, for dipping

Instructions

  1. Place the avocado, scallions, tarragon, parsley, vinegar, buttermilk and 1/2 teaspoon salt in a blender; puree until smooth. Serve with vegetable sticks.

Like many of the reviewer’s I found this very bland. It was pretty but just simply had no taste. I think next time I’ll use a green goddess recipe and use the the avocado as a base. It’s a good idea but this recipe just does fly

I agree with previous review re: bland BUT…this is a GREAT vehicle for creation(s of one’s own! I added lemon juice( Meyer, another Avo.( needed thicker..salt & pep…and other herbs: cilantro,parsley.and used champagne vinegar…the lemon & champagne vin really brightened it up…. BRILLIANT, actually….tarragon MAKES IT! I will use this as a basis for other saucy-dip type things…maybe over my oh, so fabulous veggie enchiladas!!….

I added dillweed, lemonjuice, and a few dashes of tobasco to spice it up. But, we eat everything spicy in our house.

Like the idea of using avocado as the base but it was a little bland. Wondering what other herb combinations might be good in it.

The texture of the dip was perfect! However, it really lacked flavor. The dip was overwhelmed by the vegetables I served it with, rather than acting as a pleasant compliment. I will make this dip again, but I will add some garlic, seeded cucumber, and different herbs.

i added an extra avocado and a bit of lemon juice and it turned out great! everyone was pleased with a healthier alternative! will make several times over!

This was a fresh, easy, and really yummy dip. I did use rice vinegar rather than wine vinegar because that’s all I had. The color turned a little on the second day, but still look and TASTED great! We even had it topped on hard boiled eggs for lunch.
