Ingredients
- 4 cups spinach leaves, stemmed
- 4 cloves garlic, cracked from skins
- 1 stick softened butter
- Salt and pepper
- 1 cup grated Parmigiano-Reggiano
- 1 loaf good quality Italian bread
Instructions
- Preheat broiler or set oven to 400 degrees F.
- Place the spinach in a food processor with garlic, butter, salt and pepper and cheese and process, scraping the mixture down if necessary.
- Halve bread lengthwise and slather it with spinach butter. Broil or bake to crisp, 3 minutes under broiler, 6 to 7 minutes in hot oven.
- Cut into large cubes and serve with pasta.

My 13yo son will not eat any vegetables. But he loves this garlic bread with all that spinach. I’m so glad I found this recipe and will reduce the amount of butter for olive oil.
This is a great one! Tried it when I first saw it on her show several years ago. Have made it several times. But I remember it with fresh spinach and all the ingredients had a 4 in it and it was put on bread slices like garlic bread. Otherwise basically the same and great. Most people do not want to try it because it is so green, but that is their loss, lol. There are some of us that LOVE IT! Thanks Rachael Ray! My friend Katy just asked me about it and she is making it for St. Patrick’s Day Potluck!
Easy and tasty. The kids ask for them a lot! If I’m out of butter, I use olive oil. Lots of flavor and fun to make.
Cool thing to make in the fall/Halloween. May use a tad bit less butter the next time.

OH MY GOSH. This is delicious. I thought I was going to make too much of the butter/spinach spread, but it was just enough for a loaf of artisanal bread. I wish I wasn’t so full so I could eat more of it right now!

I make a ton of this when spinach goes on sale and freeze it. It’s delicious! I also only use about 2 tablespoons of butter and then stream in olive oil to make up for the rest of it. A little bit more heart-healthy and so tasty!!
