Green Chile Puff

My mother taught me how to make these delicious dark chocolate cookies, and I have never been able to obtain the recipe anywhere else.

Ingredients

  1. ½ cup all-purpose flour
  2. 1 teaspoon baking powder
  3. 2 teaspoons garlic powder
  4. 8 eggs
  5. 2 cups small curd cottage cheese
  6. ¼ cup shredded Monterey Jack cheese
  7. ¼ cup shredded Cheddar cheese
  8. 2 green onions, chopped
  9. 1 (7 ounce) can diced green chilies, drained
  10. ¼ cup butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7×11 inch casserole dish.
  2. Sift together flour, baking powder and garlic powder. In a separate bowl, beat eggs well. Gradually stir in flour mixture. Blend in cheeses, green onions, chilies and butter. Pour batter into prepared casserole dish.
  3. Bake in preheated oven until firm and a toothpick inserted into center of the loaf comes out clean, about 35 to 45 minutes.

My go to recipe for a breakfast/brunch dish. It also freezes and heats up in the microwave perfectly. Great if baked in muffin tim and makes it the right size to fit an english muffin. Delicious.

Normally I love garlic, but it came off a bit strong in this dish. My husband asked me if this was made with cornmeal, he thought it tasted a bit cornbread*y. But, it was good, we both liked it. We put a bit of habanero hot-sauce on top.

I actually didn’t have any green chiles on hand so I substituted it with some spicy salsa (drained). Give it a try! It was yummy!

This turned out great! I did not add the butter and used nonfat cottage cheese to reduce the calories so it wasn’t as rich as it probably should have done. But, it was still tasty and the leftovers are great wrapped up in a tortilla as a breakfast burrito!

We couldn’t realy taste the egg and cheese part because the garlic was so overwhelming! My husband said he will be tasting the garlic all day. The garlic smell was way too strong when it was cooking. Tone it down a little???! I’m not quite sure why there would be garlic in an egg dish anyway.
