Greek Pizza with Spinach, Feta and Olives

This simple pizza has a powerful taste from Kalamata olives, spinach, and sun-dried tomatoes.

Ingredients

  1. ½ cup mayonnaise
  2. 4 cloves garlic, minced
  3. 1 cup crumbled feta cheese, divided
  4. 1 (12 inch) pre-baked Italian pizza crust
  5. ½ cup oil-packed sun-dried tomatoes, coarsely chopped
  6. 1 tablespoon oil from the sun-dried tomatoes
  7. ¼ cup pitted kalamata olives, coarsely chopped
  8. 1 teaspoon dried oregano
  9. 2 cups baby spinach leaves
  10. ½ small red onion, halved and thinly sliced

Instructions

  1. Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.
  2. Toss spinach and onion with the 1 Tb. sun-dried tomato oil. Top hot pizza with spinach mixture and remaining 1/2 cup feta cheese. Return to oven and bake until cheese melts, about 2 minutes longer. Cut into 6 slices and serve.

Terrible! Can’t use crumbled feta cheese and mayonnaise it doesn’t mix. Very difficult to cut sun-dried tomatoes. The 12″ pizza crust I bought was an 11″ Mama Mia, like cardboard before and after baking. Leave pizza to the Italians and let the Greeks make their always tasty meat and chicken recipes/

This was fantastic! I split the ingredients between 2 rustic style partially baked crusts, toasted in the oven about 5 minutes before following the rest of the instructions. We will definitely be having this one again.

This is indescribably good. I just eat this, my wife makes it. Alive with flavor and a great change from red sauce pizza. She adds a sprinkle of crumbled bacon or some mushrooms. Not too many extras though. The feta, olives and tomatoes really do the talking with this one.

Wow…..this was really good. Bought the pizza dough, used only 1/2 cup feta, added cooked chicken sausage (from Sam’s club) and added mushrooms. Thanks for the recipe….loved it!

My family loves this, and they’re usually hard to please. I used Mission wraps as my “pizza crusts”, and they made for the perfect thin crust pizza. I also pounded fried ikan bilis (anchovies!) and added them to the pizza sauce. I also cooked the onions over the stove separately with sugar and a pinch of balsamic vinegar, prior to adding it to the pizza.

This recipe was wonderful! My family loved it! I didn’t have any spinach so used artichoke hearts and also added fresh tomatoes. I cut the feta cheese in half and used Mozzarella for the rest.

We really liked it, but I wouldn’t call it fabulous. I think it might have been the sun-dried tomatoes that threw it off for me. Not sure. After reading the reviews, I added a little chicken, some marinated artichoke hearts, and I sprinkled some mozzarella on top along with the feta. Not sure I’ll make it again.

ok, I’m the first to admit I changed this and maybe I should not rate this, but the recipe was followed as per grocery store finds and what was on hand. I used flat-bread, sub. the mayo for butter then proceeded with the rest of prep. I added diced portabella mushrooms and red bell peppers. these freeze great and make a great snack for meatless Fridays. great recipe!

Love it. It’s my new favorite pizza. I pretty much followed the recipe although I didn’t measure anything. Just added straight from the garden halved cherry tomatoes and a handful of vidalia onions. I’m still trying to perfect a crust but I’d eat this thing without a perfect crust. Thanks for posting.

Like most people, I questioned the mayo ingredient. I’m glad I didn’t skip it! It made a FANTASTIC feta/garlic sauce for the pizza. This is easily the best spinach and feta pizza I’ve ever had. My 10 year old sister hates eating spinach, even she couldn’t resist this dish. Having limited ingredients, I gave up both the onion and the tomato. The dish didn’t suffer. It was still fantastic! It was easy to make and didn’t have a long wait time. My younger siblings even helped me make it. This is a great dish for kids to help out with. They’ll enjoy making it as much as they’ll love eating it. I’d give it 10 stars if I could.

mmm good! Never had Greek pizza before (although some family have, they enjoyed it too) but this was delicious! I didn’t even think I liked any olives (other than black). Figured in too little time (having never done it before, took me almost 1 1/2 hrs, would have been less if I had had the right tomatoes, threw some fresh to ‘dry’ in the oven while I prepped everything else.) Took mine on a plate to work and everybody stopped to ask what that wonderful smell was. 😉
