Greek Island Chicken Shish Kebabs

  4.6 – 50 reviews  • Greek

These shish kebabs with Greek influences are a tasty alternative to typical grilled chicken. They taste great when accompanied by pita bread, tangy tzatziki, and a Greek salad. Chicken can be replaced with lamb, and there are other veggie versions available.

Cook Time: 10 mins
Additional Time: 2 hrs
Total Time: 2 hrs 30 mins
Servings: 6
Yield: 6 skewers

Ingredients

  1. ¼ cup olive oil
  2. ¼ cup lemon juice
  3. ¼ cup white vinegar
  4. 2 cloves garlic, minced
  5. 1 teaspoon ground cumin
  6. 1 teaspoon dried oregano
  7. ½ teaspoon dried thyme
  8. ¼ teaspoon salt
  9. ¼ teaspoon ground black pepper
  10. 2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces
  11. 6 wooden skewers
  12. 2 large green or red bell peppers, cut into 1-inch pieces
  13. 1 large onion, quartered and separated into pieces
  14. 12 cherry tomatoes
  15. 12 fresh mushrooms

Instructions

  1. Whisk together olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper in a large glass or ceramic bowl. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
  2. Meanwhile, soak wooden skewers in water for at least 30 minutes before use.
  3. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  4. Remove chicken from marinade and shake off excess liquid; discard remaining marinade. Alternately thread chicken with bell peppers, onion, tomatoes, and mushrooms onto the skewers.
  5. Cook skewers on the preheated grill, turning frequently, until nicely browned on all sides and chicken is no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Love the flavor, this has become a go to for our family.

I made the recipe as written. Very good. I think I might eliminate the vinegar, increase the lemon juice ad increase the oil oil next time.

A family member made it! Have been looking fo a marinade I love. Found it!

Delicious! I made just a few changes. I substituted zucchini for the tomatoes. I left out the vinegar.(I followed the recipe that was in the Aug/September 2020 Allrecipes magazine which is slightly different on the spices than what is shown here. )I did not use skewers. Instead, I lined a baking sheet with foil and tossed everything on there together. We will definitely be making this again.

I really liked this recipe. Very bright and flavorful. Great on the grill. I served with a side of jasmine rice. Chicken was very tender. My family thought it was a little too lemony/vinegary, so I may reduce the acids for next time or try balance it with something sweet.

This is a super delicious recipe! I have tried many other Greek marinade recipes and this is by far the best!

We used air fryer and probably needs about 5-7 mins less cooking time than we did, chicken got a bit dry

Excellent recipe. I marinated the chicken overnight and it was exceptionally tender. Other than that, I adhered to the recipe and loved it. Will definitely make it again!

I followed the marinade recipe closely using dried spices. In had one pound of chicken breasts. So, there was plenty of marinade. I only marinated the chicken for about 30 minutes. I did put the chicken on skewers on the grill along with mushrooms, green pepper and zucchini. The chicken and vegetables cooked quickly on a hot charcoal grill. I kept an eye on it so that nothing burned. I think this is delicious and I will definitely make this again. It’s a light, healthy meal and easy enough to put together. I really enjoyed this figure-fnriendly meal.

I substituted the chicken for beef and cooked it on the grill for only a few minutes. I made some cucumber sauce and with the pita cooked with olive oil on my griddle for a few minutes, it was as good as any open gyro I’ve had in any resturant! freezes well!

I liked it very much, but it was dry. So I served it on brown rice then I made the marinade for the chicken and poured it over the vegetables, meat and rice before serving. DELICIOUS!

Delicious. I marinated for several hours. So tender.

Did it without the skewers and served with rice. There were no leftovers from the 40 people I served it to!

Delicious and easy

My husband and I really enjoyed this marinade. We used basil instead of thyme. Also, we didnt use mushrooms, because I don’t like their texture. Ate it on greek flatbread with tzatziki, and it was great. Will definitely make again.

I followed the recipe and instructions, but would not make this again as I found it to be a little bland.

Great results! My family enjoyed it and that was a surprise because I have picky 12 yr old. I used dry herbs and it was fine. I perfer my meat well done, so I will adjust the cook time to 13-15 mins. I will make it again for Easter. Thank you and Happy Easter to you.

Definitely will make this meal again. I made no changes and loved it just as it is.

Great meal. Dolce is right about the thyme – if it isn’t fresh and you’re using dried make sure it’s good quality.

The marinade is excellent! Just the right about of zing!
