Ingredients
- 4 blood oranges
- 1 cup crumbled feta
- 1/2 cup chopped black olives
- 1/4 cup olive oil
- 2 tablespoons chopped fresh mint
- 1/2 teaspoon dried oregano
- 1 jalapeno pepper, seeded and diced (or keep the seeds in for some extra spice!)
- 1/2 large cucumber, cut into thick slices then quartered
- 1/2 red onion, diced
- Kosher salt and freshly ground black pepper

Instructions
- Finely grate 1 teaspoon of the zest from the blood oranges into a bowl using a rasp grater or lemon zester. Peel and segment the oranges (or slice into rounds) and add to the bowl with the zest. Add the feta, olives, olive oil, mint, oregano, jalapenos, cucumbers, onions and some salt and pepper and toss to combine. Taste and adjust the seasoning.

Love this salad. Great flavors.
I love this salad! It’s so bright and flavorful. I like it as is but have also mixed it into Israeli cous cous (regular cous would work too).
