Chicken skewers with a strong Greek taste! Additionally delicious on grilled vegetables is marinade.

Ingredients

  1. ¼ cup lemon juice
  2. ¼ cup wok oil
  3. ⅛ cup red wine vinegar
  4. 1 tablespoon onion flakes
  5. 1 tablespoon minced garlic
  6. 1 lemon, zested
  7. 1 teaspoon Greek seasoning
  8. 1 teaspoon poultry seasoning
  9. 1 teaspoon dried oregano
  10. 1 teaspoon ground black pepper
  11. ½ teaspoon dried thyme
  12. 3 skinless, boneless chicken breasts, or as needed, cut into 1-inch pieces
  13. 8 bamboo skewers, or as needed, soaked in water for 30 minutes

Instructions

  1. Whisk lemon juice, oil, vinegar, onion flakes, garlic, lemon zest, Greek seasoning, poultry seasoning, oregano, pepper, and thyme together in a bowl and pour into a resealable plastic bag.
  2. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours.
  3. Preheat the oven to 350 degrees F (175 degrees C).
  4. Remove chicken from the marinade and shake off excess; thread onto skewers. Discard the remaining marinade. Place the skewers on a baking sheet.
  5. Roast in the preheated oven until golden brown, about 20 minutes.
  6. The skewers can also be cooked on the grill. Preheat an outdoor grill for medium heat and lightly oil the grate. Cook skewers on the preheated grill, turning occasionally, until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C).

I have never written a review on a recipe before but felt like I had to on this one! If you like Greek or Mediterranean flavors this is the recipe for you! This chicken was outstanding! Did as one reviewer suggested, increased the spices to suit our tastes. And I grilled the chicken breasts whole instead of cubing the meat. About 5 to 6 minutes a side on the grill until it reached 160 degrees then I covered it in foil to allow it to finish cooking to the recommended 165 to 167 for chicken. We also marinated the vegetables separately and then roasted them in the oven. Topped with a small amount of tomato basil feta cheese and it was amazing!! Thank you for posting this recipe!

This was a great chicken recipe. I made it with chicken breasts that cut up into 1.5 inch cubes and cooked them in my air fryer. I used a little more fresh lemon juice in the marinade because we love lemon on chicken and it was delicious. We had leftovers and happily ate it with salad for lunches.

If you like lemon chicken . . this is your recipe!! This recipe was very easy to assemble as it followed the directions to a tee. We were very impressed with the tenderness of the chicken. In fact, the leftovers were almost as good as the originally baked skewers. Next attempt will attempt to slightly lesson the lemon flavour. I wonder if BBQ vs. oven will offset some of the lemon flavour. Regardless this recipe is a keeper.

Very easy recipe to follow. The only reason I didn’t give it 5 stars was that I tend to eyeball my ingredients. The lemon was a little strong, but it was still very good! Cooked with rice and steamed veggies. Will make again!

6.4.19 Mixed up the marinade in the morning, added the chicken cubes, and marinated all day for an easy evening dinner. I live in Florida, so we pretty much can grill out all year. But when it gets as hot as it is now, it’s no fun standing out by a grill, so I really liked that this was done in the oven (used my toaster oven) in 20 minutes. Honestly, grilling may have been better and that may be an option when it cools down, but for now, the oven worked great. This chicken was absolutely delicious, tender, moist, good selection of herbs, bright flavor from the lemon juice, simply wouldn’t change a thing! Thanks for sharing your recipe, we thoroughly enjoyed it
