Ingredients
- 2 cups hummus
- One 16-ounce jar roasted red bell peppers, drained and diced
- 2 cups store-bought tzatziki
- 2 English cucumbers, seeded and diced
- 1 1/2 cups sliced mixed Kalamata and Castelvetrano olives
- 1 1/2 cups crumbled feta
- 1 pint yellow cherry tomatoes, quartered
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley
- 8 pitas, cut into wedges
Instructions
- In a shallow glass bowl or baking dish, begin layering in the ingredients in the following order: hummus, roasted red bell peppers, tzatziki, diced cucumbers, olives, feta and cherry tomatoes.
- Squeeze over the lemon juice and garnish with the parsley.
- Serve with the pita wedges.

I made this for my family tonight and it was a huge hit! I could eat it alone without pita wedges. Good job Ree! This is a keeper recipe.
I make this often with a few tweaks: I spread the hummus on a plate, do not use tzatsiki, use only kalamata olives, and use a yellow pepper and red tomatoes, I like the color of the red tomatoes rather than the yellow. The freshness of the parsley takes it over the top. Can serve with pita chips. If you have leftovers can use as a sandwich spread.
This dip tasted good, however, it sat about 2 hrs before it was eaten and the liquid from the cucumbers collected and made a huge messy and unsightly puddle in the dip. The dip was barely edible after trying to pour the liquid out and most of it was thrown away.
This recipe was a hit with my family. We will definitely be making this again. I am a huge fan of meditteranean flavors and this one hits the spot.

This dip was excellent. Made it exactly as written except used canned black olives as that’s all I had. Still delicious and was gone in a few minutes. Will use the olives recommended the next time but if you don’t have them on hand I recommend you try this recipe anyway. Thanks Ree – you never disappoint!!
