My family has used this recipe for generations and it has become a favorite. Waffle leftovers are excellent for freezing and toasting at a later date. The kids can have plenty of leftovers for breakfast before school because I normally double the recipe.

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons white sugar
- ½ teaspoon salt
- 2 egg whites
- 2 egg yolks
- 2 tablespoons grated lemon zest
- 1 teaspoon vanilla extract
- 2 cups milk
- 6 tablespoons butter, melted
Instructions
- Preheat a waffle iron according to manufacturer’s instructions.
- Whisk the flour, baking powder, sugar, and salt together in a mixing bowl; set aside. Beat egg whites until foamy in a separate large glass or metal mixing bowl. Whisk the egg yolks, lemon zest, and vanilla extract together in a third bowl; whisk in the milk. Stir in the flour mixture until smooth. Fold in the melted butter and then the beaten egg whites until just incorporated.
- Cook the waffles according to manufacturer’s instructions until golden brown.

Perfect waffles on the first try! I bought a waffle iron years ago, but I was so disappointed in the waffles I made (from a mix) that it’s been sitting in a cabinet forgotten. Obviously I decided to give it another try, and these hit the spot! They’re crisp and fluffy with just the right amount of subtle sweetness. I left out the lemon zest because I didn’t have any (I’ll try that another time), but I did everything else by-the-book and they were delicious as-is! My waffle iron may never go back in the cabinet!
These were easy and delicious. I had all of the ingredients needed in my pantry/fridge and it didn’t require the wait time necessary for yeast-based waffles. These tasted like waffles – not pancakes – and the lemon zest really made a difference. I just used the zest from one large lemon and it was more than enough. It does require you to dirty a lot of bowls, but it was worth it.

Turned out great. Added 4 T sugar snd 1/2t of almond extract. Crispy outside with a moist, chewy inside. Definitely my new “go to” for waffles!
Really liked these, nice and light. May use lemon extract next time in with the milk for a stronger lemon flavor. The lemon bits looked burned when we made the waffles. Tasted ok though.
Followed the recipe exactly, (except for omitting the lemon zest), waffles came out just fine and I froze the rest for later. I did not use lemon zest because I didn’t have any, but they still tasted yummy. I would make this again.

There are simpler recipes but these waffles turn out wonderful and worth the little extra effort. I use a old fashioned waffle iron on the stove top and they come out great.

Very dense and soft waffles. These were easy to make but uses a lot of bowls. The batter is very very thin and for a brown waffle you need to keep it in the iron for a while to get a golden waffle. Otherwise it is a pale rubbery waffle. Better off using Bisquick for quick waffles.
Not awful if chewy is what u want. Made exact then adjusted twice more… final result was same ingredients, 2 whipped eggs in magic bullet and fold into everything else as stated in recipe. U dont need the 2 extra yolks which weigh it down. U could also do 4 tbsp of butter instead of 6. Third time i added brown sugar instead of white and doubled vanilla. These changes in 3rd attempt produced a light fluffy non chewy waffle with subtle hint of vanilla that went well with syrup, whipped cream and berries. Sometimes less is more. Also wasnt into the lemon zest. I love lemon but in this recipe it wasnt for me.
