Our family would visit my grandmother’s house every Sunday morning for her baked muffins. After years of trial and error, I finally figured out the fundamental recipe and the proper serving sizes to make them taste just like she used to make them. Please try to have fun.

Ingredients

  1. 1 ¾ cups all-purpose flour
  2. 1 tablespoon baking powder
  3. ¼ teaspoon salt
  4. ½ cup butter, softened
  5. 1 cup white sugar
  6. 2 eggs
  7. 1 teaspoon vanilla extract
  8. 1 cup milk

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups. Stir the flour, baking powder, and salt together in a bowl; set aside.
  2. Beat the butter and sugar with an electric mixer in a large bowl until smooth. Add 1 egg and allow it to blend into the butter mixture; beat the vanilla and milk into the mixture with the second egg. Mix the flour mixture into the wet ingredients until just incorporated. Divide the dough into the prepared muffin cups.
  3. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 30 minutes.

Added the extra flour to 2 cups as some reviewers noted but next time, I’ll stick to 1 3/4 cups as they seemed heavy. I added cherries macerated with brown sugar to the top and they were so good! Easy recipe to adapt and add all kinds of fruits

Each time I attempted to make this recipe, my muffins would not rise and they had a bitter taste. I followed the instructions exactly as they were written and it didn’t work. I will be looking for a new recipe.

I upped the recipe to 2 cups flour and 2 tsp vanilla. I also added 1/2 tsp cinnamon and 1/2 cup chocolate chips. So yummy!

I made as directed in there instructions and they were good. I added chocolate chips and cranberries to a second batch and they were delicious.

The muffins turned out okay; next time I will increase the flour to 2 cups. I added chocolate chips and orange zest… will try other variations next time. The muffins were springy to touch but the tops didn’t brown. Mine were done in about 22 mins at 180 degrees (my microwave convection oven doesn’t allow for 175).

Used 2 cups flour, 1/4 cup each butter and vegetable oil, 2jumbo eggs, 1/4 c jelled cranberry sauce, 1/4 tsp backing soda, 1 tsp cinnamon, added: 1 cup grated carrots and 1/2 cup raisins and crasins. Made 12 really beautiful muffins filled tin 3/4 full. 30 minutes on 350 was perfect,

Really quite delicious. We followed the recipe to a T for all except the baking. We baked it at 150 degrees c for five mins less and they turned into a beautiful light gold brown top with a moist inside. Absolutely amazing with some strawberry jam or any fruit jelly. I was a little worried they might end up looking like the picture which looks rather burnt but with this adjustment they came out perfectly!

really good! I made a lot of changes, mostly due to my being short of ingredients, but I didn’t add any milk, added about 1/4 cup more butter, doubled the vanilla, used whole wheat flour, and used about 1/4 cup less sugar. They still turned out excellent!!

Absolutely fantastic recipe!! I reduced the sugar amount into half and used coconut sugar instead. The muffin tastes very delicious, the texture is very smooth and my son loves it very much!! (For his batter I added raisins, and for my batter I added walnut!)
