Grandma’s Pepper Slaw

It simply takes a few minutes to create, but you must prepare this raspberry dessert in advance. It is one of my favorites. For the dessert, you can use any size glass. Use Greek yogurt with added fat or another plain yogurt with a high fat content. Ultimately, it is dessert.

Ingredients

  1. 1 medium head green cabbage, shredded
  2. 2 green bell peppers, diced
  3. salt to taste
  4. 1 cup vinegar
  5. 1 ½ cups sugar
  6. 2 tablespoons celery seed

Instructions

  1. Toss the cabbage and bell pepper together in a large bowl. Season the mixture liberally with salt; stir. Allow to sit 45 minutes; drain and return to the bowl.
  2. Bring the vinegar and sugar to a boil together in a saucepan. Immediately remove from heat and stir into the cabbage mixture. Add the celery seed; mix thoroughly. Chill completely before serving.

My family isn’t a fan of green bell peppers, so we substituted orange and yellow and it turned out fine. I also totally forgot to season the cabbage with salt (does anyone know why you would do this?) and I used half the sugar. My husband loved it and we used it on pulled pork tacos. I love this recipe but make slightly different. I use 1 bell pepper and add 1 or 2 chopped white onions. I also add vegetable oil. This is a family favorite!
