Grandma’s Crispy Date and Pecan Cookies

a Christmas custom in the family. Is it a cookie or candy? It’s a cookie, according to Grandma Ziegler, and it tastes better than sweets. Enjoy with a coffee cup. They taste good. Do not store in the refrigerator; instead, keep in an airtight container.

Ingredients

  1. 1 cup shredded coconut, or as needed
  2. 1 cup white sugar
  3. ½ cup margarine, softened
  4. 2 eggs, beaten
  5. ½ cup chopped pecans
  6. ½ pound chopped dates
  7. 2 ½ cups crispy rice cereal (such as Rice Krispies®)
  8. 1 teaspoon vanilla extract

Instructions

  1. Place coconut in a shallow bowl.
  2. Stir sugar, margarine, and eggs together in a heavy skillet on the stove, with the burner off. Add pecans and dates. Cook over medium heat, stirring continuously, until thickened, about 10 minutes.
  3. Stir in rice cereal and vanilla extract. Remove from the heat and quickly roll mixture into 1-inch balls. Roll balls in coconut to coat and place on waxed paper to cool.
  4. These set up fast so have your area ready and all ingredients measured out.

Note to self – very very HOT! Let cool before attempting to roll! Add drops of cool water if the dough isn’t sticky enough to grab the coconut.

4.4.20 These really are somewhere between a cookie and candy, but they are delectable (seriously)! I used cocoa krispies (what I had on hand), and although the recipe tells you to work quickly, you do have to allow the mixture to cool down a bit because they’re just too hot to roll in your hands coming right out of the skillet. And even cooled a bit, I had no difficulty rolling, a 1-inch cookie scoop worked great in shaping them. I’ve had this recipe saved for quite a while, and I’m so glad I finally got around to making it. Thanks for sharing Grandma Ziegler’s recipe, it was good.
