This is my grandmother’s recipe for chicken noodle soup. Everyone will likely enjoy it because it is really savory and delicious. To add even more taste, use smoked chicken!

Ingredients

  1. 2 ½ cups wide egg noodles
  2. 1 teaspoon vegetable oil
  3. 12 cups chicken broth
  4. 1 ½ tablespoons salt
  5. 1 teaspoon poultry seasoning
  6. 1 cup chopped celery
  7. 1 cup chopped onion
  8. ⅓ cup cornstarch
  9. ¼ cup water
  10. 3 cups diced, cooked chicken meat

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add egg noodles and oil, and boil until noodles are tender, about 8 minutes. Drain, rinse under cool running water, and drain again.
  2. Bring broth, salt, and poultry seasoning to a boil in a Dutch oven. Stir in celery and onion; reduce the heat, cover, and simmer until vegetables have softened, about 15 minutes.
  3. Mix cornstarch and water together in a small bowl until cornstarch is completely dissolved; gradually stir into soup. Stir in noodles and chicken, and cook until heated through, 2 to 3 minutes.

This was EXTREMELY bland. I would never put onions in my chicken noodle soup, and where are the carrots and other spices and herbs?

Great basic recipe. My son loved it. He likes chicken noodles soup with lots of noodles. Depending on the humidity of your pantry, the liquid will need adjusting as flour may be extra dry. I always need more water for noodles in winter. I have a pasta attachment for my kitchen aid so short noodles with the spagettattachment worked perfectly.

The only changes I made were no egg noodles and no salt- subbed with riced cauliflower instead (on low carb diet) still delicious! like the old time chicken and stars soup

Delicious and easy recipe. I made a few personal preference edits to add more natural vitamins for a healthier soup and a bit more flavor.. I’m sure the recipe is excellent by itself though. Did not use butter or sauté the celery and onions hence cutting down on the fat. I also cooked the skinless boneless chicken breasts (you can use skinless chicken breast with bone) in the 12 cups of water using only 8 bullion cubes and cooked for 1 hour before adding the veggies and spices from Grandmas soup recipe, adding one ripe tomato, 1 potato with skin (in liu of cornstarch), 5 small whole garlic cloves and 1 small turnip cut in 3. I discard the Turnip at the end before adding the noodles, I used 6 ounces dried noodles to keep the soup more brothy. All veggie’s were finely diced (my preference for getting more of a mix of veggies and flavor in every spoonful. Totally cooking time was 2.5 hours, I finely diced the veggies while the chicken breast were cooking so the 2.5 hours included prep time and clean up once all ingredients were simmering together.

This is a great recipe and comes together in less than an hour. Measure your noodles carefully, too many will make the soup to thick. I added 1 cup of carrots and 2 cloves of garlic. I also recommend skinless boneless chicken thighs.

I like to cook the chicken in the broth with baby carrots, and the sautéed onions and celery. We don’t do noodles, Husband makes dumplings and then adds them to the soup. While he’s doing that, I’m deboning and shredding the now cooked chicken, to return to the pot.

I’m a salt lover, but I’ll cut back on the salt the next time I make this. I did add some carrots and black pepper, otherwise, followed the recipe. The poultry seasoning was a good addition, one I’d never before seen in chicken noodle soup, and the cornstarch slurry gave a nice consistency to the broth. We enjoyed along with a big salad for dinner.

I have made this for years now, it never disappoints and is so easy. You can throw in whatever you want…carrots, onion, garlic, etc. I aso do half low sodium and regular broth. Always good on a cold night
