Ingredients

  1. 3 cups sugar
  2. 1 cup margarine, softened
  3. 1 teaspoon vanilla extract
  4. 4 eggs
  5. 3 ½ cups all-purpose flour
  6. 2 teaspoons baking soda
  7. ¼ teaspoon salt
  8. 1 cup buttermilk
  9. 6 very ripe bananas, mashed

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
  3. In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.
  4. Bake in preheated oven until a toothpick inserted into center of the loaf comes our clean, about 60 minutes.

Very easy recipe to follow, I tweaked this recipe by using 1 cup of apple sauce replacing 2 cups of sugar, and also putting in 1 cup of raisins soaked in rum, and 1.5 cups of walnuts. This really makes this banana bread to the next level. If you use these tweaks add your buttermilk little by little until the batter is correct. Any leftover batter you can use for banana nut pancakes.

Very good…moist. Will definitely make this again. My only substitutes were almond milk in place of buttermilk and butter in place of margarine since I didn’t have those items. Update…this is my go-to banana bread when I over buy bananas! Have used this recipe three times. This time I added walnuts. Very good!

This is an excellent recipe, I think, and versatile. I subbed 1 cup of flour with a gluten free one and used egg substitutes. It didn’t rise as well but still gave me a delicious cake! I also put strawberries on top before baking.

I used 2 1/2 cups flour instead of the 3.5 cups. The bread is very light, I like that it is not super sweet, the flavor of banana really comes through! The recipe had a yield of 3.5 loafs! Very soft and supple!! Will definitely make this again!! Maybe for Welcome Back To School soon!!

Love this simple large recipe. So far I made as is then used blueberries now making with strawberries and bananas. My next one my be apple or peaches.
