Grammy’s German Potato Salad

For those who want a mayonnaise-free potato salad, here is an alternative recipe. This dish has been a longtime favorite in my family, and it is simple to modify by including other spices that your family would like.

Ingredients

  1. 8 white potatoes, peeled and cut into cubes
  2. 1 large onion, chopped
  3. 2 teaspoons white sugar
  4. ½ teaspoon dry mustard
  5. ½ teaspoon salt
  6. ¼ cup cider vinegar, divided
  7. 1 pinch ground black pepper
  8. ¼ cup vegetable oil

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until just tender, about 15 minutes; drain.
  2. Put potatoes into a large bowl; add onion and stir.
  3. Mix sugar, mustard, and salt together in a bowl. Stir just enough vinegar into the sugar mixture to form a paste; season with black pepper.
  4. Whisk remaining vinegar and vegetable oil together in a separate bowl until smooth; stream into bowl with the paste, whisking continually to incorporate. Pour the dressing over the potato and onion mixture.
  5. Cover the bowl with plastic wrap and let salad cool slightly, 5 to 10 minutes.

This was delicious! I love vinegar and tangy food but not everyone does. This was the perfect recipe to please everyone. Just tangy enough for me and not too tangy for everyone else! I also made it again but decided to saute the onions, only because a few at the party I was taking it to didn’t like raw onions. They thought it was great too. For another party I added real bacon bits and chives. Whatever you add, or just left as is, this recipe is a winner!

I like this refrigerated. I use red or pickled red onion. I also add about 5 slices of thick cut bacon chopped and rendered until just about crisp.

My mom used to make this and so did I but we would use Italian Olive Oil instead, it was so much better tasting than regular oil. I haven’t made in a while though but (note make sure to eat it warm right away)and when you have it the next day take it out of the fridge for a while and pop it in the microwave. Yummy

Was very vinagary, followed recipe as written. Would add some celery next time and reduce apple cider vinegar. I liked it warm

Just like my grandmother and Mom made, except they didn’t use the ground mustard and would use green onions in season. Grandma and Grandpa were German Russian immigrants in 1908, this is the only kind of potato salad they made. I don’t know if the recipe changed when their ancestors left Germany from the hot German potato salad you often see, or if it was just a regional difference. Love it, and my family, who are all potato salad averse, love it too!
