I learned how to make this delicious and simple recipe from my late grandmother. It’s my all-time favorite soup recipe!

Ingredients
- 3 cups water
- 2 teaspoons salt
- 1 cup chopped broccoli
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 14 ½ ounces evaporated milk
- 1 cup water
- 1 ½ teaspoons grated onion
- 1 ½ teaspoons salt
Instructions
- In a medium saucepan, bring 3 cups water and salt to a boil. Cook broccoli in boiling water, uncovered, for 10 to 12 minutes. Drain, place broccoli in a small bowl, and mash.
- Melt butter in a large saucepan over medium heat. Mix in flour, and then gradually whisk in milk and water; stir continuously until liquid begins to boil. Stir in grated onion and mashed broccoli. Season with remaining salt.

Cooked the onions first put them in blender with cooked broccoli Of some of its water. Melted butter in pan a added cornstarch then broccoli water and Some lactose free milk with salt and pepper. Very nice, easy and fast. May add crated cheese of top.
yum, what a great recipe!! my evaporated milk was expired, so I used 2% milk. I added a finely chopped celery stalk to it and fresh onion instead of dried. I also doubled the Broccoli because I love broccoli, and added two slices of American cheese at the end. What a perfect broccoli soup!

I gave it 4 stars since I made minor changes per previous reviews. I used the water from the broccoli,2 1/2 cups of broccoli, 2 cans of evaporated milk (12oz ea)added some half & half and doubled the flour. Took this to a fund-raising event and brought home 1 bowl. This got lots of compliments and I will definitely make it again. Thanks for the recipe.

This soup was tasteless and way to salty.. I think it would be better with 1/2tsp of salt instead and add some pepper….
3 stars for flavor and FIVE for creaminess!!! I added a head of broccoli, 1/2 onion, cheese, cornstarch and kept the 3 c. of water in in the beginning. I had to add quite a bit of salt to pep up the flavor, but man was the creaminess good!! ATTEMPT 2: tripled broccoli, added 1/2 & 1/2 instead of the extra cup water, a little cornstarch, 2 Chicken Boullions and cheddar. This was almost there! Next time I will add more boullion cubes and I think the creaminess & flavor will be perfected!
Great soup! I love it! I added 1/4 cup of white wine and that added TONS of flavor….serve with some croutons and shredded cheese and it is super yummy
Simple and Delicious. I sautéed diced onion with the butter before adding flour and left out the grated onion at the end. I did not add any salt at the end, either. I thought it was flavorful enough without.

Great base soup…. i added pepper, a bit more onion, some chicken boullion, and cheddar cheese…. then it was delicious!

I doubled up all ingerdients to make a nice-sized pot of soup. I also used my water from boiling the broccoli as the soup base and added some chicken soup base to the water. I used 10% cream instead of condensed milk and it turned out excellent. thanks for the recipe!
I didn’t know where to start making a cream of broccoli soup — so I’m glad I had this as a guideline (I had a lot more broccoli to use up).
I would give more stars if I could. I have been using this for years as my cream soup base for everything, as our boys are allergic to milk. A few changes: I reserve a cup of the salted water (from boiling the broccoli) to be used later in the recipe and omit the 1 1/2 tsp of salt. I also used 3/4 cups of soy milk instead of the evaporated milk. I often freeze cups of the leftover water to be used later for quick soup bases when I don’t use broccoli.
Love it! I add instant mashed potatoes and all kinds of stuff to make it great. (Anything I can think of that I have around that looks good… noodles, etc.)
Loved the taste of this soup, I do add some chedder cheese on top and it’s great! My husbend likes it, so thats a plus!
This recipe was suprisingly good! I didn’t try this for the longest time because it seemed too simple and basic to be any good. I added some finely grated parmesan cheese to it at the end – other then than I followed the recipe exactly as written. Oh, but if you are cooking for more than one or two people I would definately double or even triple the recipe – does not make very much.
