A Middle Eastern/Mediterranean hit that is quick and easy. These cookies have been made by both Bedouin women living in the middle of the desert and small Jewish grandparents in Jerusalem. A wonderful quick meal that is quick, adaptable, and not overly sweet. Enjoy.

Ingredients

  1. 4 cups soft bread cubes
  2. 2 cups peeled and sliced apples
  3. ¼ cup raisins
  4. 1 ¾ cups milk
  5. 1 cup brown sugar
  6. ¼ cup butter
  7. 2 large eggs, beaten
  8. 1 teaspoon ground cinnamon
  9. ½ teaspoon vanilla extract
  10. ½ cup milk
  11. ½ cup butter
  12. ¼ cup white sugar
  13. ¼ cup brown sugar
  14. 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 7×11-inch baking dish.
  2. Make pudding: Combine bread, apples, and raisins in a large bowl. Combine milk, brown sugar, and butter in a small saucepan over medium heat. Cook and stir until butter is melted. Pour over bread mixture in the bowl; mix until evenly coated. Pour bread mixture into the prepared baking dish.
  3. Whisk eggs, cinnamon, and vanilla together in a small bowl. Pour egg mixture over bread mixture in the baking dish.
  4. Bake in the preheated oven until the center is set and apples are tender, 40 to 50 minutes.
  5. Meanwhile, make vanilla sauce: Mix milk, butter, white sugar, and brown sugar together in a saucepan. Bring to a boil, remove from heat, and stir in vanilla. Serve over pudding.

Loved this recipe! Very easy to make. I didn’t make the vanilla sauce but drizzled caramel sauce on top. Bread pudding has been a staple in our family since I was a young child. This is similar to my grandmother’s except she didn’t add the apples.

This is a very good recipe. I used two cups of canned peaches, drained and chopped and put at the bottom, under the bread mixture, in place of the apples. Bread should be cubed, not crumbs. No raisins. I thought the sugar amount was fine. It baked up very nicely in about 35 minutes. It set up perfectly. I let it rest for about 20 minutes before serving. I used caramel sauce instead of the vanilla sauce. It was delicious!

Modified this recipe, as most others did. I used cinnamon-raisin bread as my bread cubes and omitted the extra raisins. Turned out great!

Good flavor, but it is way too sweet and way too moist. Adding the sauce would make it worse. Still, the flavor of both is good. Also, I wish I had used apples that were little tangier.

This is an absolute Keeper that everyone enjoyed! I decided to serve with a vanilla bean ice cream instead of the sauce but will try it with the sauce the next I make it. Yum!

I wanted to add to my review with this suggestion. I used my apple corer/peeler. It made it easy to just cut up the apple after running it through and less apple is lost in the peeling. I also used apple pie seasoning instead of the cinnamon. Same idea, just different spices.

I’ve never been a bread pudding fan, but I had a few crusts of bread I needed to use and I figured hubby would like it. I just made a half a recipe, but it was quick and easy to prepare. It was very tasty by itself, but the vanilla sauce brings it upto stellar! I used half and half for the milk, and butter in place of margarine. Thanks for a wonderful recipe!

Thank you for the inspiration as I love bread pudding! Because I want to eat this I had to make some substitutes. I used Trader Joe’s gluten free Brioche bread, and cashew nut milk, although I still used eggs. I doubled the amount of the sauce. I happened to have frozen wild blueberries I got at Costco so used them instead of raisins & apples. The result was beautiful and yummy. Someone suggested using melted vanilla ice cream so I told that route. Oh My…it was diViNe!

This recipe has potential but MUCH too sweet the way it is! Even my kids said so! It could have done with 1/2 c brown sugar in the bread and apple mixture. I made it with leftover brioche which was very nice. Baked for 45 min, perfect consistency. I used half the amount of sugar for the sauce and 1/4 cup heavy cream + 1/4 cup milk which added a richness to the sauce! Will try it again but with half the amount of sugar next time.

We really liked this version of bread pudding. It is more has more of a pudding base than some versions but if you like that style of bread pudding this is great. I really liked the apples. I didn’t have raisins so I skipped them. You don’t need the sauce but it is good. If I didn’t have time to make it, it wouldn’t stop me from making this. I will be making it again! Thank you for sharing.

Made this last night and it was the best bread pudding I’ve ever had. Might add a couple of more cups of bread cubes to the recipe, but the flavor was amazing. The caramelization on the bottom really was a bonus treat. I’ll be making this again. Next time, I’ll add a scoop of vanilla ice cream on top. Yum!

Omg absolutely delicious! I halved the amount of sugar in the pudding because the reviews said it was too sweet. And it was a good call. The original amount would have made it way too sweet! I also used dried up bread (I left it out on the counter for a few hours to airdry). I do this with french toast as well so it can absorb all the custard and this stops the end product from becoming soggy. I also cubed the apples into 1-1.5 cm cubes instead of slicing them. The bread was also cut into similar sized cubes. I also used butter instead of margarine. I sprinkled some brown sugar on top and the baking time took around 5-10 mins extra. Just perfect!

Loved it!! Used butter instead of margarine, otherwise followed to the letter. Was worried about it being dry, but the sauce at the end takes care of that. Will definitely make this again.

The taste of this bread pudding is absolutely delicious! I had a problem with it being too moist. I think next time (very soon) I will experiment with cooking temp and or use stale bread instead of soft bread. My husband loved it and say this recipe is definitely a keeper!

I liked the recipe but it was way too sweet. I think using a lot less sugar would be better. Thats what I’ll try next time.
