Ingredients
- ½ cup mayonnaise
- 2 ½ teaspoons Cajun seasoning
- 1 cup gluten-free panko bread crumbs
- 1 (1 pound) fillet cod, cut into 4 pieces

Instructions
- Combine mayonnaise and Cajun seasoning in a small bowl. Place bread crumbs on a plate.
- Spread Cajun mayonnaise on both sides of fish fillets with a small spatula or butter knife. Coat each fillet, one at a time, with bread crumbs. Lightly spray both sides of breaded fillets with cooking spray and transfer 2 fillets to each air fryer tray; do not overcrowd.
- Turn an air fryer to the Roast setting (375 degrees F (190 degrees C) according to manufacturer’s instructions and set timer to 14 minutes. Rotate trays at 7 minutes. Fish should flake easily with a fork.
- Carefully remove fillets from the trays and serve.
- Your fish fillet should be about 1/2 inch thick. You can use any white fish for cod.
- Cajun seasoning blends can be found in most grocery stores. I like to make my own Cajun seasoning with the Cajun Spice Mix recipe on this site.
- You can use regular panko bread crumbs if you don’t require a gluten-free diet. Paleo and keto options: Use 1 cup ground pork rinds or 3/4 cup almond flour and a compliant mayonnaise.
- I have the Pampered Chef(R) Deluxe Air Fryer, which does not require preheating. The need to preheat an air fryer and cook time might be different depending on your air fryer brand. I recommend referring to your air fryer’s manufacturer’s guide and following their instructions for preheat and cook time of fish. This recipe is amazing, but I don’t want you to have issues because your air fryer is different than mine. If your air fryer does not have trays, carefully flip the fish fillets halfway through the cook time.

I love anything cajun and fish so this was a big hit for me. My air fryer doesn’t have a shelf so I flipped halfway through. Lovely flavour and the cod was perfectly cooked in the time specified. This is my recipe and I just want to note that the Roast setting on my air fryer sets the temperature to 375F. Also, my original recipe does not instruct you to flake fish with a fork. You can do that to test doneness, but then the breading will be a little messed up in terms of appearance/presentation. If you have a meat thermometer or probe, the fish is cooked through when internal temp reaches 140-145F. Maybe the Allrecipes gods will see my review and update my recipe accordingly, but if not, I hope these minor details help and that you enjoy this recipe!
