Ingredients
- 4 tablespoons butter
- 4 bulbs fennel, cut into wedge
- 3 tablespoons sugar
- 1 cup apple cider
- 1 cup chicken stock
- 2 sprigs thyme
- Salt and freshly cracked black pepper
- 1/4 cup chopped parsley leaves
- 1 cup apple cider
- 1 teaspoon cayenne pepper
- 3 tablespoons brown sugar
- Grapeseed oil, to sear
- 4 (8-ounce) boneless and skinless salmon fillets
- Salt and freshly cracked black pepper
Instructions
- Preheat the oven to 425 degrees F.
- Braised Fennel:
- In a large Dutch oven over medium-high heat, add the butter. Add the fennel and sugar and cook for 3 to 4 minutes until the fennel caramelizes. Add the cider, stock and thyme. Cook until the fennel is tender and liquid is reduced, about 10 minutes Season the fennel with salt and pepper, to taste. Add the parsley and mix well. Remove from the heat and cover.
- Glaze:
- In a small saucepan, add the cider, cayenne and brown sugar and cook over medium heat until 1/2 cup of liquid remains. Set aside.
- Salmon:
- In a large saute pan over medium-high heat, add the oil. Season the salmon fillets with salt and pepper, to taste, and sear for 4 minutes in the hot oil. Remove from the pan and put, seared side up, on a quarter sheet tray with a rack. Spoon the glaze over the top of each fillet and bake until cooked through, about 4 minutes. Remove from the oven to a serving platter and serve with the braised fennel alongside.

This was a big step for me… I havent cooked with salmon much and rarely with fennel.. I had some leeks I needed to use so I added them to the Braised Fennel.. My husband went nuts for this meal!! Thanks Aaron!
This dish had great flavors and is a definite make again for me. I will say that my fennel didn’t caramelize to a nice dark brown as it did in the show, but I think I didn’t let the butter start to brown before adding the fennel. I would also recommend starting your sauce reducing first as mine was quite thin and took awhile to get to a thicker consistency. Lastly, I added just 1/4 t. of the cayenne and thought it was a nice kick to the sauce….1 t. would be killer.
This was an excellent dish and relatively simple to make for a total amateur cook such as myself. It was also my first time eating fennel, and it was a nice surprise. But fennel is one of the more expensive vegetables in my area. The flavors were well balanced but I am going to cut down on the cayenne pepper next time. It was a bit too much heat for me. Please keep in mind that my heat tolerance is very low. I’ll also reduce the brown sugar correspondingly. I will be making this dish again.
I thought the fennel was fantastic!!–though I didn’t use as much sugar as the recipe called for, and I thought it was quite sweet enough. I think if I had used as much as the recipe suggested, it would have been too sweet (for me). I did think (and my husband agreed) that the cayenne overpowered the salmon; next time (and I will make this again) I definitely will use less cayenne. I also just used a regular baking sheet, and the salmon turned out just fine. I will say that in spite of the three parts to keep track of–the salmon, the fennel, and the glaze–this recipe is incredibly easy and took barely any time at all. It seems like a lot, but really this recipe is great for middle of the week if you don’t have a lot of time but want a good meal.
The dish was excellent my family really really really enjoyed it.
I only prepared the glazed salmon and it was delicious. The glaze was sweet and savory. I did not have a grill rack so I used a pyrex pan to place the salmon in the oven after the salmon had seared. It was delicious. I will definitely try the braised fennel next time I prepare this dish.
Grilled the salmon instead of searing it. After grilling one side, I flipped the fish and spooned the sauce over the top and closed the grill. It was amazing! The braised fennel was very good. My husband doesn’t like fennel and actually asked for seconds. Very easy recipe. I will definitely make again!
