My wife’s favorite pecan-crusted salmon recipe is tasty and simple to make! great when coupled with a fine red wine, such as Pinot Noir.

Ingredients

  1. ½ cup fresh bread crumbs
  2. ½ cup finely chopped pecans
  3. 3 teaspoons chopped fresh parsley
  4. ¼ cup olive oil
  5. ¼ cup soy sauce
  6. ¼ cup brown sugar
  7. 2 teaspoons lemon pepper
  8. 1 teaspoon dried thyme
  9. 1 teaspoon dried basil
  10. 1 teaspoon dried parsley
  11. ½ teaspoon garlic powder
  12. 6 (4 ounce) fillets salmon

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Mix bread crumbs, pecans, and fresh parsley together in a small bowl.
  3. Whisk olive oil, soy sauce, brown sugar, lemon pepper, thyme, basil, dried parsley, and garlic powder together in another bowl.
  4. Pour the brown sugar glaze generously over each piece of salmon. Cover the top of each fillet with bread crumb mixture.
  5. Bake in the preheated oven until salmon flakes easily with a fork, 10 to 15 minutes depending on thickness.
  6. Bake fish for 10 minutes per inch of thickness.

Thank you for this recipe. This is one of the most delicious salmon dishes I’ve ever prepared. I used 1/2 lb of salmon divided into two 4 oz pieces but kept all the ingredient amounts. Other than that no other changes were made. I will also use this recipe for pork or beef, it is that amazing.
