Ingredients
- ½ cup ketchup
- ⅓ cup brown sugar
- ¼ cup lemon juice, divided
- 1 teaspoon mustard powder
- 2 pounds ground beef
- 3 slices bread, broken up into small pieces
- ¼ cup chopped onion
- 1 large egg, beaten
- 1 teaspoon beef bouillon granules
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ketchup, brown sugar, 1 tablespoon lemon juice, and mustard powder in a small bowl.
- Combine ground beef, bread, onion, egg, bouillon, and remaining lemon juice in a separate large bowl. Add in 1/3 of the ketchup mixture from the small bowl. Mix well and place in a 5×9-inch loaf pan.
- Bake in the preheated oven for 1 hour. Drain any excess fat, coat with remaining ketchup mixture, and bake for 10 more minutes.

Best Meatloaf ever
Great recipe. The whole family loved it. I used biscuits instead of bread. I also dropped the lemon juice and substituted Sweet Baby Rays for half of the ketchup.
I am in my twenties and trying to find easy meals to cook—y’all this meatloaf is AMAZING!!!!! And so easy! The sauce is what makes it. I don’t own a loaf pan so I baked it on a cookie sheet without any issue, and I used bread crumbs instead of bread, but everything else was the same. That SAUCE is to die for!!

Probably shouldn’t try out a new recipe when you are inviting guests for supper. They loved it and asked for the recipe.
I followed this recipe 100% and was really disappointed in the end. I was unable to cut it without it crumbling, even after trying a second time 30 minutes later. Too much ketchup for my taste and I’d recommend sauteing the onions first so that they don’t crunch. Maybe I’m more of a meatloaf and gravy guy but this meatloaf was really unappealing to me.
Fantastic recipe and adding mustard to the meatloaf mix is not a bad move. Next time I will have finer bread pieces and partially cooked onion. Plus a few other secrets in the future but so happy with this simple glaze and mix.

I’ll be the first to admit, I am a decent cook but have never been able to make a good meatloaf. I made this meatloaf last night and it was fabulous! My husband said it was the best I’ve ever made. I made a change only because I didn’t have exactly everything and I didn’t want to go to the store. I used yellow mustard instead of mustard powder. And I didn’t have bouillon granules so I used beef bouillon cubes and mashed them up. This was fabulous!!!
I am a guy and can cook simple dishes. Wife was sick so I tried this recipe. I thought it was good and the wife and kids loved it.
Made exactly how recipes states first serving of 6. Will probably put sauce on after 50 minutes of cooking. So sauce can caramelize for 20 minutes and would maybe use a little less ketchup and brown sugar just a bit too sweet for my taste but otherwise fantastic.
I cut back on the brown sugar. This was very tasty!
This is a great meatloaf. It is full of flavor and moist. It’s definitely on the sweet side, but we liked it. I did use breadcrumbs instead of bread because I had them and others said it was better. The only thing I didn’t like was that it didn’t really slice well.
We’re not big meatloaf fans (in fact, I NEVER make it!) but when my picky eater grandkids were coming, I decided to give this a try. It was a hit with everyone! My husband, my mom, my daughter-in-law and I loved it too! Very moist and flavorful with whipped mashed potatoes and steamed veggies. The only change I made was to substitute dried onions as the kids won’t eat onions if they can see them. We’ll see defintely make this again even when the grandkids aren’t here!
Separated into smaller tins for later use. Added strips pre cooked bacon to bottom of pan for added flavor.
Instead of dried bread crumbs or torn bread soaked in milk, I use 1/2 cup or so of AP flour n 2eggs. I use the same AP flour + eggs combo for hamburgers n meatballs and they come to softest and juiciest. I usually fry my hamburger patties n bake my meatballs. I learned this from my friend Lynne, decades ago.
This was a delicious meatloaf. It was a hit with my son and husband. I used bread because I forgot to buy breadcrumbs. I cut the bread into tiny pieces and then crumbled it. I added fresh garlic, parsley, salt and pepper. When I make this meatloaf a second time, I will make a little less sauce. That is just my personal preference. I am not much of a gravy or sauce person. A little goes along way for me.
