Ingredients
- ½ cup white sugar
- ¼ cup applesauce
- ¼ cup molasses
- 3 tablespoons vegetable oil
- 1 egg
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ teaspoon ground cloves
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ½ cup boiling water
- 1 teaspoon white sugar, or to taste
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- Combine 1/2 cup sugar, applesauce, molasses, vegetable oil, and egg in a medium bowl; beat with an electric mixer until combined.
- Stir together flour, baking soda, cinnamon, salt, cloves, ginger, and nutmeg in a separate bowl. Add flour mixture to applesauce mixture, stirring until combined. Add water; mix until well combined. Pour batter into the prepared muffin cups, filling each about 2/3 full. Sprinkle lightly with remaining sugar.
- Bake in the preheated oven until tops spring back when lightly pressed, 20 to 25 minutes.

These were good. I wish they had a bit more flavour but I can tweak the recipe if I want but they were still pretty good.
Simple yet tasty. I made these as written with the exception of the additional sugar topping, I totally forgot. These muffins remind me of a traditional gingerbread cake that my mom always made for Christmas. Definitely something that I will make again. Thanks for the recipe.
