The leftovers from the holidays are perfect for this turkey pozole! Pozole is a typical New Year’s meal made with pork and is a genuine Mexican dish. Add shredded green cabbage, lime juice, and crisp tortilla chips as a garnish.

Ingredients
- 1 ⅓ cups milk
- 1 egg
- 1 tablespoon applesauce
- 2 teaspoons ground ginger
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 cups baking mix
- cooking spray
Instructions
- Beat milk, egg, applesauce, ground ginger, vanilla extract, and cinnamon together in a bowl. Whisk baking mix into the milk mixture until just combined into a loose batter.
- Prepare a skillet with cooking spray and place over medium heat.
- Ladle about 1/4 cup batter into the prepared skillet; cook until bubbles begin to form on the top, 3 to 5 minutes. Turn the pancake and continue cooking until the other side of the pancake is golden brown, 3 to 5 minutes more. Transfer pancake to a plate and cover with a lid to keep warm. Repeat until batter is completely used.

You are so right about the aroma-the made my house smell wonderful this morning. We enjoyed the recipe, and I only used about half of the spices-we’re sometimes not daring in the morning. They were a great take on a traditional breakfast that we love.
I used a homemade baking mix and homemade spiced apple butter in this recipe. I did add one more tablespoon of the apple butter, I was kind of confused as to why there was only one tablespoon in the whole recipe and why it was there, until I figured out that it must be replacing the fat that would normally be in a pancake recipe. I served these with homemade maple-vanilla pancake syrup. These pancakes cooked up nice and fluffy and were the perfect consistancy, it’s just that the ginger was a little too much for us. I don’t want to downrate the recipe because I know that the submitter meant for the pancakes to be that way, it was just a little too much for us. I will make these again only I would cut back on the ginger some.
